Position Overview
We are looking for a reliable, detail-oriented Overnight Doughnut Room Baker to lead our nightly doughnut production. You’ll be responsible for mixing, frying, glazing, and filling our crowd-favorite doughnuts from scratch, ensuring our display cases are flawlessly stocked before the doors open at 6:00 AM.
No two nights are exactly the same, but the standard of quality always is.
Key Responsibilities
- Scratch Production: Scale, mix, roll, and cut yeast-raised and cake doughnut dough according to Frank's classic recipes.
- Frying & Finishing: Safely operate commercial fryers, track frying times, glaze, frost, and fill doughnuts (jelly, cream, etc.) with consistency.
- Kitchen Efficiency: Manage your nightly schedule independently to ensure all varieties are completed on time for the morning rush.
- Cleanliness & Safety: Maintain a clean work area, wash your production bowls/utensils, and strictly follow food safety and sanitation guidelines.
- Inventory Prep: Help prep or stock ingredients for the following shift as needed.
What We Are Looking For
- The Overnight Mindset: You genuinely enjoy or adapt well to working night shifts while the rest of the city is asleep.
- Reliability is Everything: Our morning customers depend on the bakers showing up. Punctuality and dependable attendance are absolute musts.
- Physical Stamina: Ability to stand for long periods, lift bags of flour/ingredients (up to 50 lbs), and work around hot fryers and ovens.
- Experience: Previous commercial baking, kitchen, or frying experience is a huge plus, but we are willing to train the right candidate who has passion, focus, and a strong work ethic.
- Attention to Detail: You care about consistency—ensuring every doughnut looks as good as it tastes.
