Originally starting as two stalls in Baltimore’s Lexington Market, the brand has evolved into a world-renowned culinary destination celebrated for its "Gold Standard" jumbo lump crab cakes.

Position Overview
At The Fishmonger’s Daughter, we approach pastry with the same intention as the rest of our kitchen and bar program. We value craftsmanship, precision, and a deep respect for ingredients. Our pastry cook contributes not only to the final course of the meal, but to the lasting impression guests take with them. We are seeking a knowledgeable, skilled, and detail-oriented Pastry Cook to join our culinary team.
Our pastry program emphasizes refined yet approachable desserts, house-made components, seasonal ingredients, and careful technique. The Pastry Cook plays a vital role in maintaining consistency, quality, and presentation standards while supporting menu development and production, requiring precision, organization, creativity, and a strong understanding of classic pastry fundamentals.
Pay
Starting from $18 an Hour.
Essential Duties and Responsibilities
Pastry Cook Responsibilities:
- Maintain a clean and organized workspace throughout production and service.
- Follow standardized recipes precisely for consistent preparation and portion control.
- Prepare and present desserts, baked goods, and plated components according to established recipes.
- Produce house-made items, including creams, custards, ganache, sauces, and doughs, and assist with frozen desserts.
- Ensure all station mise en place is prepped, stocked, rotated, and monitored for quality.
- Execute service professionally, ensuring excellence in cooking, timing, plate assembly, and effective communication.
- Maintain garnish, temperature, and presentation standards for all dishes.
- Participate in scheduled prep, including organizing the kitchen, stocking stations, cleaning areas, and maintaining equipment.
- Assist with receiving, proper storage, rotation (FIFO), preparation, and cooking of all food items.
- Follow all safety and sanitation guidelines, including safe food handling, HACCP plans, and waste disposal.
- Adhere to uniform, dress code, and hygiene requirements.
- Continuously seek to refine techniques and demonstrate a desire for learning and professional growth.
Minimum Qualifications (Knowledge, Skills, and Abilities)
- 1+ years of pastry or baking experience required.
- Experience with laminated doughs, Viennoisserie production, and all facets of bread production.
- Experience with ice cream and sorbet production.
- Strong understanding of pastry fundamentals and classic techniques.
- Ability to work independently and as part of a team.
- Ability to walk or stand for long periods.
- Basic reading and computer skills.
- Excellent communication skills.
- Advanced knife skills.
- Strong organizational, time management, and multi-tasking skills.
- Commitment to consistency, attention to detail, and knowledge of company food specifications.
- Knowledge of workplace safety, ServeSafe or Food Handler certification, and ability to work well under stress.
