Key Responsibilities
- Prepare ingredients according to recipes and production schedules, including washing, peeling, chopping, slicing, dicing, and portioning vegetables, fruits, herbs, meats, poultry, and seafood.
- Fabricate and portion proteins while maintaining quality and minimizing waste.
- Prepare pizza dough and other menu components according to established recipes and standards.
- Accurately measure, weigh, and scale ingredients for batch preparation.
- Prepare sauces, stocks, dressings, garnishes, and other kitchen essentials.
- Perform basic cooking techniques such as blanching, roasting, simmering, poaching, and other assigned food preparation tasks.
- Follow prep lists and prioritize tasks to ensure all ingredients are ready before service.
- Label, date, and properly store all prepared food items while following FIFO (First In, First Out) inventory rotation procedures.
- Maintain clean, organized, and fully stocked prep stations, refrigerators, and storage areas.
- Monitor food temperatures and ensure proper food handling practices at all times.
- Prevent cross-contamination by following allergen and food safety protocols.
- Minimize food waste through proper preparation, storage, and portion control.
- Clean and sanitize workstations, utensils, equipment, and kitchen surfaces throughout each shift.
- Restock ingredients and supplies as needed and assist Line Cooks and other kitchen team members during service.
- Operate commercial kitchen equipment safely and efficiently, including slicers, food processors, mixers, scales, vegetable cutters, immersion blenders, commercial ovens, and other standard kitchen equipment.
- Perform basic equipment cleaning and maintenance while reporting any equipment issues to management.
Experience
- Previous experience in a dietary department or dietary aide role is highly valued
- Familiarity with menu planning and food preparation techniques in a restaurant or food service setting
- Hands-on experience with food handling, safety protocols, and kitchen sanitation practices
- Knowledge of culinary techniques including cooking methods and meal assembly
- Experience working in the food industry or catering environments is advantageous
- Strong knife skills and proficiency in meal preparation are preferred
- Ability to work efficiently in a fast-paced environment while maintaining attention to detail
