SUMMARY
This position maintains the cleanliness and organization of kitchen work areas, storerooms, and equipment; including china, glassware, flatware, and chaffers; assists in the dish room washing dishes and at breakdown stations for catering functions; and assists in the preparation of salads, appetizers, sandwiches, meats, vegetables and other hot and cold menu items to company specifications for consumption by guests.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Washes, peels, slices and mixes vegetables, fruits or other ingredients for salads, cold plates and garnishes. Carves and slices meats and cheese. Portions and arranges food on serving dishes and trays. Carves meats, portions food on serving plates, adds gravies, sauces and garnishes according to menu specifications.
- Sets up catering “serving” and “clearing” stations to include oval trays, 8’ tables, linen bags, garbage cans, empty poker chip dollies, empty glass racks, etc.
- Thoroughly knowledgeable on the proper usage and storage of all facility equipment, glassware, china and silver, and ensures all items are returned to designated storage locations.
- Transports food items such as salads, dressings, butters and desserts to catering service areas. Transports supplies, china and equipment, such as hot boxes between storage and work areas.
- Assists in plating food for catering functions. Trays up food at food distribution areas for catering staff.
- Assists at breakdown stations during functions. Maintains close communication with supervisor, including supply needs and maintenance of all equipment.
- Responsible for the organization and cleanliness of storerooms and coolers. • Fills and delivers requisitions of food, beverages, and supplies to proper areas.
- Scrapes food from dirty dishes, racks china, glassware and flatware and washes by hand or on dishwashing machine. Washes dishes, pots, pans and trays. Returns all clean kitchen utensils and equipment to proper storage location. Cleans kitchen equipment.
- Washes worktables, walls, refrigerators, and meat blocks. Reorganizes work area in preparation for the next shift.
- Segregates and removes trash and garbage, and places in designated containers. Takes out trash and recycling. Cleans and maintains interior and exterior trash area. Sweeps and mops floors.
- Loads and/or unloads trucks picking up or delivering food and supplies.
- Complies with local, state, and national regulations pertaining to cleanliness, sanitation, and safety standards.
- Attends required meetings, pre-meal meetings and training sessions as assigned/scheduled.
- Assists with new employee training by positively reinforcing successful performance and providing respectful and encouraging instruction.
- Complies with the organization’s sustainability standards (when applicable).
- Complies with organizational policies and job standards. • Completes all other duties as assigned.
MINIMUM REQUIREMENTS
- Availability to work nights and weekends as needed.
- While performing the duties of this job, the employee is regularly required to stand for long periods of time, walk, squat, and reach. The employee frequently is required to use hands to finger, handle, or feel objects, tools, or controls and talk and hear. The employee must occasionally lift or move up to 50 pounds. Specific vision abilities required by this job include close vision, color vision, peripheral vision, depth perception, and ability to adjust focus.

- Food handler certification.
