Position Overview
Nanna’s Cafe & Bread Company is Rapid City’s only dedicated gluten-free bakery and café. As we continue expanding Nanna’s House at our new Uptown Rapid Mall location, we are seeking an experienced Full-Time Line Cook & Prep Cook to help lead daily kitchen production and service execution.
This is a fast-paced, production-focused role designed for a dependable, experienced cook who can handle breakfast and lunch service, egg cookery, prep production, and hot line execution while maintaining high standards of consistency, cleanliness, and urgency.
Our kitchen is fully gluten-free, scratch-made, and quality-driven. We are looking for someone who thrives in a team environment, communicates well under pressure, and takes pride in delivering exceptional food every shift.
Key Responsibilities Breakfast & Lunch Service
- Prepare and execute breakfast and lunch menu items with speed, consistency, and accuracy
- Cook egg-based dishes including fried eggs, scrambled eggs, omelets, and breakfast specials
- Maintain strong ticket awareness and support efficient service flow during peak hours
- Deliver consistent presentation, quality, and portioning standards
Hot Line Execution
- Execute pizza production, appetizer service, donut frying, and line cooking responsibilities
- Operate fryers, flat tops, ovens, grills, and standard kitchen equipment safely and efficiently
- Maintain clean, organized, and fully stocked stations throughout service
- Monitor food quality and maintain production standards during high-volume periods
Prep & Production Responsibilities
- Complete daily prep lists including proteins, vegetables, sauces, doughs, batters, fillings, and scratch-made components
- Portion and label ingredients according to kitchen standards
- Support bulk prep and production for daily operations and special events
- Ensure all stations are properly stocked and prepared before service begins
- Follow all recipes, production systems, and SOPs without deviation
- Maintain proper food storage, rotation (FIFO), labeling, and sanitation procedures
Standards & Team Responsibilities
- Maintain strict gluten-free handling procedures and prevent cross-contamination at all times
- Follow all food safety, sanitation, and health department standards
- Work closely with kitchen leadership and team members to maintain smooth operations
- Assist other stations and team members as needed during service
- Take ownership of station cleanliness, organization, and performance
- Contribute to a positive, hardworking, team-oriented kitchen culture
Required Qualifications & Skills
- Previous commercial kitchen or line cook experience required
- Breakfast experience and egg cookery experience strongly preferred
- Ability to work in a fast-paced, high-volume kitchen environment
- Strong knife skills and prep production experience
- Experience using fryers, flat tops, ovens, grills, and kitchen line equipment
- Ability to multitask and maintain urgency under pressure
- Strong communication and teamwork skills
- Reliable, punctual, and dependable attendance required
- Understanding of food safety and sanitation procedures
- Gluten-free kitchen experience is a plus, but not required
