About Fiama Pizza
Fiama Pizza is a mobile pizza catering brand under the Bean & Rose hospitality group, serving weddings, private events, corporate events, and venue-partnered celebrations throughout Colorado.
We provide the brand, bookings, client communication, menus, systems, vendor lists, event details, and operating procedures. We are looking for a reliable, food-safe, highly organized operator to execute Fiama Pizza events from start to finish.
This is not a traditional hourly kitchen job. This is an opportunity to operate a proven event brand with confirmed bookings and ongoing lead flow.
Role Overview
The Fiama Pizza Cart Operator is responsible for fulfilling booked Fiama Pizza events according to Bean & Rose standards.
You will receive confirmed event details, guest counts, menus, pack-out lists, setup expectations, vendor guidance, and operating procedures. Your job is to handle the event execution: purchasing approved food and supplies, transporting equipment, setting up the pizza cart experience, preparing and serving pizza on-site, managing staff if needed, cleaning up, and completing post-event reporting.
The right person is dependable, organized, calm under pressure, comfortable with food service, and capable of treating each wedding or private event with serious care.
Responsibilities
The operator will be responsible for:
- Reviewing assigned event details, timelines, guest counts, menus, venue notes, and pack-out lists.
- Confirming availability for events in a timely manner.
- Purchasing approved ingredients and supplies from approved vendors such as Shamrock, Sysco, Restaurant Depot, or other designated suppliers.
- Picking up food, supplies, rentals, or event materials as needed.
- Storing, maintaining, and transporting Fiama Pizza equipment.
- Ensuring all required equipment is packed, clean, organized, and event-ready.
- Arriving at venues on time and prepared.
- Setting up the Fiama Pizza cart, ovens, prep area, service area, signage, and guest-facing display.
- Preparing and serving pizza according to Fiama Pizza recipes, standards, and service flow.
- Maintaining clean, safe, and professional food handling practices.
- Managing event staff or helpers when required.
- Communicating professionally with venue staff, planners, clients, and guests.
- Completing cleanup, pack-out, and equipment return/storage after each event.
- Reporting any issues, missing items, equipment problems, guest complaints, or venue notes after the event.
- Uploading basic event photos, videos, notes, receipts, or completion confirmations when requested.
Required Qualifications
Applicants must have:
- Valid driver’s license.
- Active ServSafe Manager certification.
- Reliable transportation capable of transporting event equipment, or the ability to rent/use an approved vehicle or trailer as needed.
- Weekend availability, especially Fridays, Saturdays, and Sundays.
- Ability to lift, carry, load, and unload event equipment and supplies.
- Experience in food service, catering, events, food trucks, mobile vending, restaurants, hospitality, or a similar operational role.
- Strong attention to detail.
- Ability to follow written procedures, recipes, checklists, and timelines.
- Professional communication skills.
- Comfort working independently at events.
- Ability to troubleshoot calmly when unexpected issues arise.
- Willingness to maintain food safety, cleanliness, and brand standards at every event.
Preferred Experience
Ideal applicants may have experience as a:
- Catering lead
- Food truck operator
- Banquet captain
- Event chef
- Kitchen manager
- Restaurant manager
- Mobile food vendor
- Commissary kitchen operator
- Wedding/event operations lead
- Hospitality entrepreneur
Prior pizza experience is helpful, but not required if you are highly trainable, organized, and experienced in event execution.
Tools and Systems Used
Operators may use or interact with:
- Bean & Rose operator portal or project management system
- Event calendars
- Pack-out checklists
- Vendor lists and purchasing guides
- Event production sheets
- Menu and recipe manuals
- Venue notes and setup diagrams
- Payout tracking
- Post-event reporting forms

You do not need to build the website, run ads, manage the sales funnel, or close clients. Bean & Rose handles bookings, marketing, client inquiries, payment collection, and core systems.
Equipment and Storage
Fiama Pizza events require specific equipment and tools, including ovens, prep tables, service tools, food transport containers, signage, sanitation supplies, and other event materials.
Operators must be able to safely store and maintain equipment in a clean, secure, and accessible location. This may include a storage unit, garage, commissary storage space, or other approved storage solution.
Operators may use personally owned equipment, approved rented equipment, or equipment provided through a Bean & Rose equipment program, depending on the arrangement.
Equipment expectations include:
- Keeping all equipment clean, organized, and event-ready.
- Transporting equipment safely to and from events.
- Reporting damaged, missing, or malfunctioning equipment immediately.
- Maintaining proper storage for food-safe tools and supplies.
- Ensuring ovens, tables, tools, and service materials are packed according to the Fiama Pizza checklist.
- Using only approved equipment setups for Fiama Pizza events.
If an operator does not currently own all required equipment, Bean & Rose may discuss equipment access, rental, or earn-out options with qualified candidates.
Food Safety Requirements
Food safety is non-negotiable.
Operators must:
- Maintain an active ServSafe Manager certification.
- Follow all applicable local and state food safety requirements.
- Use approved food sources and vendors.
- Maintain safe food temperatures during transport, prep, holding, and service.
- Prevent cross-contamination.
- Follow sanitation and handwashing procedures.

- Never serve unsafe, mishandled, contaminated, or temperature-abused food.
- Comply with venue, commissary, and health department requirements.
- Immediately report any food safety concern, illness, contamination risk, equipment failure, or guest complaint.
Depending on event location and setup, operators may also be required to maintain applicable mobile food, retail food, commissary, or local health department approvals.
Training and Certification
Before operating Fiama Pizza events independently, selected operators will complete a Fiama Pizza onboarding and certification process.
This may include:
- Brand and operations orientation.
- Review of Fiama Pizza menus, recipes, and service standards.
- Equipment training.
- Pack-out checklist training.
- Food safety review.
- Vendor and purchasing guidance.
- Shadowing an event.
- Running a supervised event.
- Completing one or more supported events before full certification.
Certification is based on competency, reliability, professionalism, and ability to execute events to Fiama Pizza standards.
Compensation
This role is structured as a revenue-share operator opportunity.
Bean & Rose provides the brand, marketing, bookings, sales funnel, systems, client payment processing, menus, vendor guidance, and event procedures.
The operator fulfills the event and earns the majority of eligible event revenue, according to the operator agreement.
Exact payout structure, event fees, equipment repayment if applicable, gratuity handling, travel fee handling, and payout timing will be reviewed with qualified candidates.
