The Lead Baker leads daily baking operations, ensuring consistent quality across all products. They manage recipe execution, oversee production schedules, and supervise bakery staff. With knowledge of baking techniques and ingredient handling, they maintain food safety standards, troubleshoot issues, and contribute to menu development. This role blends hands-on craftsmanship with leadership and precision.
Main Job Tasks and Key Responsibilities
- Reports to the Bakery Director
- With Bakery Director, develops the week’s baking schedule and time management.
- Lead the preparation and baking of breads (including bagels and rolls), pastries, cookies, and specialty items
- Develop and refine recipes and menu with Bakery Director, ensuring consistency and quality across batches
- Monitor inventory of baking ingredients and supplies
- Train and supervise Bakers with Bakery Director supervision
- Maintain high standards of food, service, health, and safety in compliance with Health Department standards
- Collaborate on seasonal menus and new product development
- Collaborate with Kitchen, Cafe and Marketing on promotions
- Work closely with team to develop and adhere to supplies and labor budget
- Troubleshoot baking issues and adjust processes as needed
- Ensure timely production to meet daily demand and special orders
