Schedule: 40–60 hrs/week early mornings weekends & holidays during peak seasons

About Wydaho Roasters
Wydaho Roasters is a specialty coffee roaster, café, and scratch bakery with locations in Driggs and Victor, on the quiet west side of the Tetons. We mix, laminate, proof, and bake everything in house — no par-baking, no reheating, no frozen finishing. Our program runs deep on laminated dough, French pastries, cakes, and breads, and we’re growing fast. We’re hiring an experienced baker to help lead that growth.
The Role
As Assistant Bakery Manager & Production Lead, you’ll run daily scratch production, support and develop our team of bakers, and work directly with the owners and general manager to scale recipes and curate our menus. This is a hands-on leadership role — in the mix every morning, setting the pace and holding the standard — with real ownership and real room to grow as the bakery does.
What You’ll Do
- Lead daily scratch production from mixing through bake — no par-baking or reheating
- Scale recipes accurately for production volume and develop new ones as the menu evolves
- Work directly with the owners to curate and refine the bakery menu across seasons
- Manage daily production, mixing, and workflow schedules
- Maintain product quality and consistency across all bakery offerings
- Train and coach team members on baking techniques and production standards
- Help manage inventory, ingredient organization, and FIFO practices
- Monitor waste and find ways to improve efficiency and reduce loss
- Help maintain bakery equipment and support preventative maintenance
- Lead by example through consistency, accountability, curiosity, and a willingness to jump in wherever the team needs you
What We’re Looking For
- Minimum 4 years of professional bakery experience, preferably in a high-volume scratch production environment
- Scratch baking experience is essential — you build products from raw ingredients, not finish frozen ones
- Strong pastry experience is a huge plus — laminated dough especially
- Confident scaling recipes and contributing to recipe development
- Bilingual English/Spanish is a nice to have
- Strong organizational skills and attention to detail
- Able to manage multiple priorities in a fast-paced environment
- A genuine interest in teaching, coaching, and developing others
- Comfortable receiving feedback and always looking to learn
- Strong communicator with a collaborative mindset
