Sky Deck at Del Mar Highlands Town Center · 12841 El Camino Real, Suite 200, San Diego, CA · Full-Time & Part-Time · Hourly + Tips
The bar sets the tone for the whole room. We’re looking for an experienced bartender who pours with precision, works clean at full speed, and treats every guest at the rail like a regular — because that’s how you make them one.
About Us
Lobster Lab is Tiger Hospitality Group’s coastal seafood concept — lobster rolls, lobster grilled cheese, chowders, and seafood salads, rated the #1 lobster roll in San Diego on Yelp. Our newest location just opened on the Sky Deck at Del Mar Highlands Town Center, and the bar sets the tone for it. We believe hospitality means making people feel genuinely cared for, and we hold ourselves to that standard on every shift — with our guests and with each other.
About the Role
A year from now, success looks like this: your drinks are consistent to spec every time, the bar runs smoothly three-deep on a Friday night, service tickets never back up, guests come in and ask if you’re working, and the bar is spotless when you hand it off. This is a role for someone who takes pride in both the craft and the hospitality.
What You’ll Do
- Prepare and serve cocktails, beer, wine, and non-alcoholic drinks accurately and consistently, for both bar guests and the service well
- Create a welcoming bar experience — greet everyone quickly, make conversation, remember faces and preferences
- Serve alcohol responsibly: check IDs, monitor guests, and make the right call on when to slow down or stop service
- Manage tickets and sequence drinks efficiently during rushes without sacrificing quality
- Handle cash and card payments accurately and keep a clean drawer
- Keep the bar stocked, organized, and clean — prep, batching, garnishes, inventory counts, and closing breakdown
- Work as one team with servers, barbacks, and the kitchen
What We’re Looking For
Required:
- 2+ years of bartending experience in a restaurant or bar
- Solid knowledge of classic cocktails, pours, and technique — and the curiosity to keep learning
- A hospitality-first mindset — friendly, attentive, and professional, with real customer-service instincts
- Speed and composure under high volume; you stay organized when it gets loud
- 21 or older, with California RBS (Responsible Beverage Service) certification, or willingness to certify within 60 days of hire
- Availability that includes evenings, weekends, and some holidays; able to lift ~40 lbs (kegs, cases, ice)
Nice to have:
- Craft cocktail or high-volume bar experience
- Wine and spirits knowledge (or certifications)
- Experience training barbacks or newer bartenders
Pay & Perks
- Competitive hourly wage plus tips
- Full-time and part-time schedules available, with flexible scheduling
- Shift meals and employee dining discounts
- A real voice in the drink menu, and growth into bar lead roles as Tiger Hospitality Group expands across Southern California
