Position Overview:
The Event & Catering Sous Chef will lead a team of Kitchen staff during events, ensuring timelines for setup, food preparation, execution, and cleanup are met and that all expectations are achieved. Key responsibilities of the Event & Catering Sous Chef include managing the creation of prep sheets associated with events and working closely with the Purchasing department and Executive Chef to ensure product is on-hand and ready to prepare for events. This position requires strong organizational skills, self-motivation, the ability to adapt and adjust to changing situations, and the ability to problem solve. Although our golf season runs from May through October, this position is Year-Round and has responsibilities that vary throughout the year. During our offseason, the Clubhouse stays open for catering services and special events.
Position Responsibilities:

Prepare a variety of different food items.

Handle, prepare, and rotate all products maintaining proper sanitation & food storage guidelines.

Meet specific event deadlines with consistent punctuality and complete required tasks within assigned time frames.

Manage execution of food operations throughout various food outlets at the Club including International Park, club cottages & food truck events.

Manage efficient product preparation to ensure correct par levels specific to an event; balancing waste with confidence of not running out of product.

Understand and comply consistently with Castle Pines Golf Club standards which include cooking methods, quality standards, kitchen rules, policies and procedures.

Working directly with the Executive Chef and other chefs to meet strict timelines.

Qualifications:

Experience in event and catering services for private, high-end events required.

Culinary management experience required.

Ala carte fine dining experience required.

Ability to organize and execute both plated and buffet-style events upwards of 350 people.

Ability to represent Castle Pines in a professional manner off-site at venues and in Member’s homes.

Ability to communicate clearly with Managers, Kitchen staff, and Dining Room staff.
