Any applicant for the position of Line Cook must be able and willing to work in coordination with fellow cooks for the preparation of mise-en-place for all service periods in order to complete tasks in a timely manner. Abide to all quality standards and specifications as prescribed by the Executive Chef .
1. Maintain an organized, sanitary, and safe working environment at ALL times with a positive and supportive attitude and approach.
2. Follow kitchen and club procedures
3. Follow current health, sanitation and safety measures.
4. Consult with Executive Chef/Sous chefs for any daily specific needs.
5. Assist with service and set up of all banquets and special member events.
6. Assist all fellow cooks in other stations as needed.
7. Interact with other departments in a positive manner in order to insure the ongoing success of the club.
8. Execute cleaning schedule and daily clean-up procedures.
9. Check with Exec. Chef/ Sous chef before going on break or punching out for the day.
Qualifications:
To successfully perform the position of line cook the individual must be able to fulfill each essential duty to the specifications of the kitchen requirements. The skills needed are advanced knife skills, a current Washington State Food Handler’s Permit, and a desire to perform in a positive manner. The individual must posses advanced production and conceptual skills necessary to execute preparation of recipes for menu and banquet items; this includes the concepts of emulsions, sauté, simmering, poaching, roasting, braising, classical and improvisational soup preparation, checking meats for doneness and other advanced cooking techniques. The individual must have an above average aptitude for coordination and dissemination of duties to facilitate the accurate and timely service of the menu items for member satisfaction.
Physical and Cognitive Requirements:
Must be able to lift 50 pound boxes. Posses the ability to stand for an 8 hour shift with legally allowed breaks. Work quickly and accurately with minimal supervision.
