Position Summary
Chandelier Premier Steaks & Seafood is seeking an experienced and motivated Executive Sous Chef to join our culinary leadership team. This is an exciting opportunity for a talented chef who is passionate about fine dining, committed to culinary excellence, and ready to help lead the kitchen of one of Washington, DC's premier steak and seafood restaurants.
Working alongside the Executive Chef, the Executive Sous Chef will oversee daily kitchen operations, mentor and develop the culinary team, maintain the highest standards of food quality and consistency, and ensure flawless execution during every service.
Responsibilities
Culinary Leadership
- Assist the Executive Chef in directing all kitchen operations and daily service.
- Lead and supervise the culinary team during lunch and dinner service.
- Maintain the highest standards of food quality, consistency, presentation, and execution.
- Train, coach, and develop line cooks, prep cooks, and culinary supervisors.
- Foster a positive, professional, and team-oriented kitchen culture.
Kitchen Operations
- Ensure recipes, portion standards, and plating specifications are executed consistently.
- Oversee production, prep schedules, and line organization.
- Monitor food quality, ticket times, and service execution during peak periods.
- Assist with ordering, inventory management, receiving, and product rotation.
- Maintain proper food safety, sanitation, and HACCP standards.
- Support scheduling and labor management to achieve operational goals.
Operational Excellence
- Partner with the Executive Chef on menu development, seasonal features, and continuous improvement.
- Assist in managing food costs, waste reduction, and inventory controls.
- Work collaboratively with the front-of-house management team to ensure seamless communication and exceptional guest experiences.
- Lead by example through professionalism, urgency, and attention to detail.
Qualifications
- Minimum 3 years of culinary leadership experience in a fine dining steakhouse, upscale seafood restaurant, luxury hotel, or comparable high-end restaurant.
- Culinary degree preferred but not required.
- Strong knowledge of premium steaks, seafood, classical cooking techniques, butchery, sauces, and modern plating.
- Proven ability to lead, motivate, and develop culinary teams.
- Excellent organizational, communication, and time management skills.
- Ability to thrive in a fast-paced, high-volume fine dining environment.
- Thorough understanding of food safety, sanitation, and kitchen operations.
Preferred Qualifications
- Experience working in chef-driven or nationally recognized fine dining restaurants.
- Experience with steakhouse cooking techniques, seafood fabrication, and scratch kitchens.
- ServSafe Manager or equivalent food safety certification.
- Experience opening new restaurants is a plus.
