KITCHEN LEAD — BREAKFAST RESTAURANT

Early Shifts — Start @ 5am and done by 3:30pm!
Must be available Saturdays and Sundays — these are our busiest and most important days!
Biscuit House is looking for an experienced, dependable Kitchen Lead to help lead our back-of-house team. This is a hands-on position — you'll work alongside the kitchen team while helping ensure each shift runs efficiently, food goes out quickly and consistently, and our standards are being met.
We're looking for someone who can lead by example, stay calm during a busy breakfast rush, train and support the team, and take ownership of the kitchen.
JOB DUTIES
- Lead the kitchen team during daily service, with a major focus on successfully running our busy Saturday and Sunday shifts.
- Perform and oversee shift opening and closing duties, including starting equipment, baking biscuits and scones, preparing stations, and end-of-day breakdown.
- Set up and stock food stations with all necessary supplies and prepare food for service.
- Work cooking stations as needed, including managing the flat-top Egg Station during busy service rushes, with a focus on speed, accuracy, and quality.
- Coordinate and manage team breaks to ensure employees receive their breaks while maintaining proper kitchen coverage.
- Train and coach kitchen employees on recipes, procedures, opening/closing routines, food safety, portioning, presentation, and Biscuit House standards.
- Help onboard new kitchen employees and ensure training is being completed correctly and consistently.
- Monitor food quality and presentation before orders leave the kitchen.
- Ensure recipes, portions, plating, and preparation methods are followed consistently.
- Maintain ticket times and help organize the kitchen during high-volume service.
- Communicate with FOH and management to keep service running smoothly.
- Monitor inventory, pars, prep levels, and product availability and communicate ordering needs to management.
- Help reduce food waste by ensuring proper portioning, rotation, storage, and FIFO procedures.
- Maintain a clean, organized, and sanitary kitchen throughout the entire shift.
- Ensure kitchen employees are completing cleaning and sanitation responsibilities.
- Comply with food-safety regulations, sanitation requirements, and workplace safety standards.
- Hold the kitchen team accountable for following established procedures and expectations.
- Maintain a positive, professional approach with coworkers and customers.
- Have the ability to lift containers up to 60 lbs and stand for long periods.
WHAT WE'RE LOOKING FOR
This position requires someone who is comfortable being both a cook and a leader. You should be willing to jump onto a station when needed while also keeping an eye on the bigger picture — ticket times, food quality, cleanliness, staffing, breaks, prep, and overall kitchen flow.
Our Kitchen Lead is expected to set the pace and the standard for the kitchen, especially during our busiest weekend shifts.
REQUIREMENTS
- 2+ years breakfast restaurant cooking experience
- Previous lead, trainer, shift lead, or kitchen leadership experience preferred
- Must be available to work Saturdays and Sundays
- Must have a valid Food Handler's Permit
- Strong knowledge of food preparation and presentation
- Ability to lead and train a team
- Strong communication and organizational skills
- Professional and clean appearance
- Valid driver's license
- Task-driven and able to prioritize in a fast-paced environment
- Accuracy, speed, and consistency are key
- Dependable and punctual
- Able to pass a background check
COMPENSATION
- Full-time
- Early morning/day shifts
- MUST BE ABLE TO WORK SATURDAYS AND SUNDAYS
- Competitive hourly base pay PLUS approximately $5+/hr in tips
- Compensation based on experience and leadership background
