We are currently seeking an instructor for CUL 222 Restaurant Production for Fall 2026.

CUL 222 Course Description
This combination hands-on lab and lecture course will provide students with advanced training in an open-to-the-public a la carte restaurant. Students will train in the restaurant focusing on seasonal and local ingredient sourcing. Techniques in charcuterie, Garde manger, and the techniques, tastes, and flavors of regional American cuisines will be presented with an emphasis on organization, preparation, execution, and service. Continuing training in preparing vegan and vegetarian recipes will be included.

- Demonstrated understanding of restaurant station roles, both classical and contemporary
- Apply local foods and sustainable practices to menu planning for restaurant sales
- Demonstrated understanding of functionality and artistry of the presentation of food
- Demonstrated ability to create kitchen staff schedules and payroll
- Demonstrated ability to lead pre-shift meetings
- Demonstrate knife skills, cooking skills, kitchen safety techniques, and various equipment operations
- Demonstrated inception, creation, costing, and writing of recipes
- Observe seasonal dynamics of food production in an urban farm setting and apply to course objectives

8:45 am to 1:50 pm, Monday, Tuesday, Wednesday, Thursday
