JOB TITLE: Banquet Sous Chef
REPORTS TO: Executive Chef
SALARY RANGE: 60k-70k
LOCATION: 188 florence St, Chestnuthill, MA
DESCRIPTION: The Banquet Sous Chef assists the Executive Chef in the planning, preparation, coordination, and execution of high-quality food service operations for Hillside Detox. This position provides leadership, support, and guidance to the culinary team while ensuring meals, banquet events, and kitchen operations meet the highest standards of quality, safety, presentation, and service. The ideal candidate is an experienced culinary professional with strong leadership skills, attention to detail, and the ability to thrive in a fast-paced environment.
DUTIES AND RESPONSIBILITIES:
Assist the Executive Chef with all aspects of daily kitchen and banquet operations.
Lead, supervise, and support kitchen staff during food preparation, meal service, and special events.
Prepare, cook, and present high-quality menu items while maintaining consistency and adherence to established recipes and standards.
Coordinate banquet food production to ensure timely execution and proper preparation of all meals and events.
Ensure proper food handling, storage, labeling, rotation, and sanitation procedures are followed.
Monitor food quality, presentation, portion control, and overall dining experience.
Assist with menu planning, seasonal specials, and development of new culinary offerings.
Support inventory management, ordering, receiving, and food cost control procedures.
Assist with maintaining appropriate food supplies, equipment, and kitchen organization.
Train, coach, mentor, and provide guidance to kitchen team members.
Ensure compliance with Board of Health, The Joint Commission, Department of Public Health Bureau of Substance Use Services, and all applicable food safety regulations.
Maintain ServSafe standards and ensure proper sanitation practices throughout the kitchen.
Monitor food temperatures and ensure meals are served at appropriate temperatures.
Assist with inspections conducted by authorized agencies and participate in quality improvement initiatives.
Maintain a clean, organized, and safe kitchen environment.
Assist the Executive Chef with developing and implementing kitchen policies, procedures, and standards.
Step into the Executive Chef role and provide kitchen leadership during periods of absence when needed.
Communicate effectively with facility leadership, vendors, and kitchen staff.
Demonstrate the mission, vision, and values of Hillside Detox through professionalism, teamwork, and commitment to excellence.
Participate in facility events, banquets, and special programming as needed.

QUALIFICATIONS:
Preferred Requirements:
Minimum of three (3) years of professional culinary experience, including banquet, catering, or high-volume food production experience.
Previous supervisory or kitchen leadership experience preferred.
Culinary degree or equivalent professional culinary experience preferred.
ServSafe Food Protection Manager Certification or ability to obtain shortly after hire.
Strong knowledge of food safety, sanitation, and kitchen safety standards.
Experience with banquet buffet service and large-scale meal production preferred.
Knowledge of inventory management, ordering procedures, and food cost controls.
Strong knife skills and knowledge of modern culinary techniques.
Ability to lift up to fifty (50) pounds and stand for extended periods.
Flexible schedule, including evenings, weekends, and holidays as needed for events.
