Job Summary
The Dietary Manager is responsible for overseeing all aspects of the dietary department to ensure residents receive nutritious, appetizing, and well-balanced meals in accordance with physician orders, therapeutic diets, state regulations, and facility policies. This position supervises dietary staff, manages food service operations, maintains sanitation standards, and promotes a positive dining experience for residents in both assisted living and memory care settings.
Essential Duties and ResponsibilitiesFood Service Operations
- Plan, organize, direct, and supervise daily dietary operations.
- Ensure meals and snacks are prepared and served according to approved menus, recipes, portion sizes, and resident dietary requirements.
- Maintain meal service schedules and ensure timely delivery of meals.
- Monitor food quality, appearance, temperature, and presentation.
- Ensure therapeutic and modified diets are followed accurately.
- Accommodate resident food preferences, allergies, and special dietary needs whenever possible.
Resident Care & Nutrition
- Collaborate with physicians, dietitians, nursing staff, and caregivers regarding resident nutritional needs.
- Review diet orders and ensure dietary staff understand and follow all resident diet requirements.
- Monitor resident food intake concerns and communicate observations to nursing staff.
- Participate in resident care plan meetings as needed.
- Promote resident satisfaction through quality food service and dining experiences.
Staff Supervision
- Recruit, train, schedule, supervise, and evaluate dietary employees.
- Ensure adequate staffing levels are maintained.
- Conduct performance evaluations and provide coaching when necessary.
- Monitor employee compliance with food safety, sanitation, and infection control practices.
- Assist with disciplinary actions and corrective counseling as needed.
Regulatory Compliance & Food Safety
- Maintain compliance with all federal, state, local, and licensing regulations.
- Ensure compliance with food safety standards, sanitation requirements, and infection control procedures.
- Monitor kitchen cleanliness and sanitation practices.
- Ensure proper storage, labeling, dating, and rotation of food products.
- Conduct routine inspections of kitchen equipment and food storage areas.
- Maintain all required dietary records and documentation.
Inventory & Budget Management
- Order food, supplies, and equipment within budget guidelines.
- Maintain adequate inventory levels while minimizing waste.
- Monitor food costs and department expenditures.
- Conduct routine inventory counts and track usage.
- Ensure proper receiving and storage of deliveries.
Kitchen & Equipment Maintenance
- Ensure kitchen equipment is maintained and functioning properly.
- Report equipment repairs and maintenance needs promptly.
- Coordinate with maintenance personnel regarding kitchen repairs.
- Ensure kitchen areas remain clean, safe, and organized.
Special Events & Resident Engagement
- Coordinate meals and refreshments for resident events, family gatherings, holidays, and special celebrations.
- Work collaboratively with the Activity Department to support facility events and themed meals.
- Assist in creating enjoyable dining experiences that enhance resident quality of life.
Qualifications
- High School Diploma or GED required.
- Dietary Manager Certification (CDM) preferred or willingness to obtain if required by state regulations.
- Previous supervisory experience in food service, healthcare, assisted living, long-term care, or hospitality preferred.
- Knowledge of therapeutic diets and senior nutrition preferred.
- Valid ServSafe Food Protection Manager Certification preferred or willingness to obtain.

- Ability to manage budgets, inventory, and purchasing.

- Basic computer skills for scheduling, documentation, and ordering.
Physical Requirements
- Ability to stand and walk for extended periods.
- Ability to lift, carry, and move up to 50 pounds.
- Ability to work in a kitchen environment with exposure to heat, steam, and cleaning chemicals.
- Ability to bend, stoop, reach, and push carts as needed.
Work Schedule
- Full-time position.
- Must be available to work weekends, holidays, and flexible hours as needed to meet resident care and dietary service needs.
- On-call availability may be required for staffing or emergency situations.
