About the Role
As General Manager of Restaurant Hubert, you are responsible for leading one of Sydney’s busiest and most dynamic restaurant operations.
This is a hands-on role requiring a visible presence on the floor, leading service from the front while maintaining a strong focus on commercial performance, operational excellence and team development. You will oversee a large and diverse team, balancing the demands of a high-volume business with the attention to detail that define the Hubert experience.
- Leading the venue through active, floor-based management across lunch and dinner services
- Driving commercial performance through effective labour management, productivity and cost control
- Building and developing a high-performing leadership team through coaching, accountability and clear direction
- Maintaining exceptional service standards and guest experiences at scale
- Overseeing rostering, forecasting and day-to-day operational planning
- Ensuring compliance across employment, safety and operational requirements
- Working closely with the Executive Team to identify opportunities for continuous improvement and business growth
About You
You are an experienced hospitality leader who combines strong commercial acumen with a genuine passion for service and people.
- Proven experience as a General Manager or senior operational leader within a high-volume premium dining environment
- Strong commercial capability, including labour management, budgeting, forecasting and cost control
- Demonstrated ability to lead large teams and develop future leaders
- Strong operational discipline and attention to detail
- Confidence managing the demands of a seven-day operation, including regular weekend and peak-period involvement
- Exceptional communication, problem-solving and decision-making skills
- A genuine commitment to hospitality, guest experience and team culture
