ABOUT US
Naja Mediterranean is a fast-growing Mediterranean restaurant located in the Mosaic District, serving authentic Lebanese-inspired dishes made fresh daily. We're looking for an experienced cook who takes pride in consistency, cleanliness, and doing things the right way every single time.
WHAT WE'RE LOOKING FOR
We are prioritizing candidates with real kitchen experience — not entry-level. The ideal candidate has worked in a fast-paced kitchen before, understands proper food safety and sanitation standards, and is comfortable with prep work as a core part of the role.
Experience in Mediterranean, Lebanese, or Middle Eastern cuisine is strongly preferred. Familiarity with dishes like shawarma, kofta, falafel, hummus, baba ghanouj, and manoushe will set you apart.
RESPONSIBILITIES
- Prepare ingredients and dishes following exact recipe specifications — no shortcuts, no guessing
- Maintain consistent portioning, seasoning, and presentation across every shift
- Follow proper FIFO (First In, First Out) rotation on all ingredients and prepped items
- Maintain a clean, sanitized, and organized station at all times
- Label and date all prepped items accurately
- Follow proper food safety protocols — correct food storage temperatures, cross-contamination prevention, color-coded cutting boards
- Communicate clearly with kitchen leadership about inventory, prep needs, and any issues on the line
- Work efficiently during high-volume service while maintaining quality standards
REQUIREMENTS
- Previous cook or kitchen experience required
- Strong understanding of food safety, sanitation, and proper hygiene practices
- Comfortable with prep work — this is a significant part of the role
- Familiarity with FIFO and basic kitchen organization principles
- Ability to work in a fast-paced, high-volume environment
- English proficiency required
- Arabic language a strong plus
- Reliable, punctual, and able to work a full-time schedule including weekends
