Job Summary
We are seeking a passionate and skilled Sushi Chef specializing in Japanese cuisine to join our vibrant culinary team at our Spring Mountain location. As a Sushi Chef, you will craft exquisite sushi and sashimi dishes, ensuring each plate meets our high standards of quality, presentation, and authentic flavor. Duties
- Prepare a variety of sushi, sashimi, and other Japanese dishes with precision and artistry, adhering strictly to recipes and presentation standards
- Maintain high standards of food safety and sanitizing procedures throughout all stages of food handling and preparation
- Operate kitchen equipment such as sushi knives, rice cookers, grills, and refrigeration units safely and efficiently
- Assist in menu planning by suggesting new sushi creations and seasonal specials that align with culinary trends and customer preferences
- Ensure consistent quality control by monitoring ingredient freshness, portion sizes, and overall dish presentation
- Collaborate with the culinary team to execute high-volume production during busy service periods while maintaining attention to detail
- Follow all food safety management protocols including proper food handling, storage, braising, poaching, grilling, and braising techniques to uphold health standards
- Support catering events or special functions by preparing sushi platters and ensuring timely service delivery
- Maintain cleanliness of the kitchen area through regular sanitizing procedures and proper organization of tools and ingredients
Experience
- Proven culinary experience with a focus on sushi or Japanese cuisine in a fine dining or high-volume restaurant setting
- Strong knife skills with the ability to perform precise cuts for sashimi and other dishes
- Experience in menu planning, food production, and meal preparation within the food industry
- Knowledge of food safety sanitizing procedures and food handling best practices
- Prior experience operating kitchen equipment such as rice cookers, grills, poaching pots, braising pans, and refrigeration units
- Familiarity with dietary department standards or dietary aide experience is a plus for accommodating special dietary needs
- Demonstrated ability to work efficiently under pressure while maintaining high-quality standards in a fast paced environment
