Job Description:
The Prep & Line Cook are responsible for supporting all aspects of food production, from daily preparation and organization to executing service during meal periods. This role plays a key part in maintaining food quality, consistency, cleanliness, and efficiency across multiple food and beverage outlets on campus.
Responsibilities:
- Prepare and execute menu items according to TCE standards, recipes, and presentation guidelines.
- Complete daily prep lists and maintain appropriate levels of mise en place based on anticipated business volumes.
- Assist with line cooking during service periods while maintaining speed, accuracy, and consistency.
- Ensure proper food handling, storage, labeling, dating, and rotation procedures are followed.
- Monitor product freshness, temperatures, and food safety standards throughout the shift.
- Communicate with the Executive Chef and Sous Chef regarding inventory needs, low-stock items, and operational concerns.
- Operate, maintain, and properly clean all kitchen equipment and tools while reporting safety hazards or equipment issues.
- Properly store, cover, label, and date all unused product at the end of service.
- Maintain a clean, organized, and safe work environment throughout the shift.
- Assist in minimizing food waste and managing food costs through proper preparation and portioning.
- Support multiple kitchen outlets and adapt to changing operational needs as required.
- Perform opening, ongoing, and closing cleaning duties to ensure the kitchen is ready for the next shift.
Qualifications:
- 1–3+ years of kitchen experience in prep, line, or production cooking.
- Experience in high-volume, banquet, seasonal, or multi-outlet food service environments preferred.
- Understanding of food safety, sanitation, and kitchen best practices.
- Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
- Strong communication skills and ability to work collaboratively with kitchen and service teams.
- Ability to stand for extended periods and lift up to 50 pounds.
- ServSafe certification preferred.
