Overview
We are seeking a dedicated and highly skilled CBRF Lead Cook to oversee the culinary operations within our 60 unit facility. The ideal candidate will possess solid culinary expertise, particularly in dietary and food service settings, with a focus on high-quality meal preparation and food safety. As the Lead Cook, you will play a vital role in managing daily kitchen activities, ensuring compliance with safety standards, and delivering nutritious, appealing meals that meet the needs of our residents or clients. Your leadership will foster a positive kitchen environment while maintaining the highest standards of food quality and sanitation.
Duties
- Ordering raw food for the prepartion of all meals.
- Prepare and oversee the production of meals in accordance with dietary guidelines, ensuring nutritional accuracy and presentation quality.
- Lead food preparation activities including techniques such as poaching, braising, grilling, and other cooking methods suited to diverse menu requirements.
- Supervise kitchen staff and dietary aides, providing training on food handling, sanitation procedures, and culinary techniques to promote efficiency and safety.
- Plan menus that accommodate special dietary needs while maintaining variety and appeal for residents or clients.
- Ensure compliance with food safety management protocols, including sanitizing procedures, proper food handling, and storage practices to prevent contamination.
- Manage food production efficiently while maintaining consistency in taste and presentation.
- Develop meal plans aligned with health standards and individual preferences.
- Maintain accurate inventory control, monitor supplies, and order ingredients as needed to support continuous food service operations.
Requirements
- Proven experience in dietary departments or dietary aide roles within healthcare or residential settings.
- Extensive culinary experience including menu planning, food preparation, and food industry knowledge.
- Strong skills in various cooking techniques such as poaching, braising, grilling, and general food production.
- Demonstrated ability to manage high-volume food service operations with efficiency and attention to detail.
- Knowledge of food safety sanitizing procedures, handling protocols, and sanitation standards essential for health compliance.
- Experience in fine dining or restaurant environments is advantageous for maintaining high standards of presentation and quality.
- Excellent knife skills along with proficiency in catering, serving, and meal preparation tasks.
- Ability to lead a team effectively while fostering a positive work environment focused on safety and excellence in culinary service.
