Duckstache Hospitality is excited to announce that we are looking for a talented culinary professional to join our management team as a Back of House (BOH) Shift Lead. This position is full-time, working a flexible schedule of 40 hours a week, and must be available to work weekends. This role is paid hourly with a starting pay of $23.00 per hour.

About Doko
Chefs Patrick Pham and Daniel Lee have over 30 years of combined experience in Japanese cuisine and sushi. They established their culinary careers in Houston, where they worked together for four years at an award-winning Japanese restaurant. Pham and Lee teamed up to bring new curated dining concepts to Houston’s food scene and kicked off a series of omakase pop-up dinners called Secret Taste. In 2019, Pham and Lee opened Kokoro Sushi and Yakitori in the Bravery Chef Hall in Downtown Houston, and following their success opened Handies Douzo shortly after, along with Aiko & Himari. Doko is a chef-driven concept where Chef Patrick and Daniel showcase their talent and creativity daily.
Job Purpose
At Duckstache Hospitality, our leads are dedicated to upholding our cultural values while ensuring the highest standards in food quality, cleanliness, and kitchen operations. The Back of House (BOH) Shift Lead is responsible for assisting managers and chefs in overseeing food quality and kitchen operations during restaurant service while leading the BOH team throughout the shift. This role requires strong leadership, attention to detail, culinary knowledge, and a commitment to maintaining a clean, organized, and efficient kitchen environment.
Duties and Responsibilities
The primary job duties and responsibilities of a BOH Shift Lead include, but are not limited to, the following:
- Lead BOH employees throughout the shift in the absence of managers and chefs.
- Assist managers and chefs in overseeing daily kitchen operations and ensuring the BOH is properly prepared for service.
- Responsible for the production and presentation of food items according to established recipes, standards, and specifications.
- Prepare and organize kitchen stations prior to service.
- Monitor food quality, consistency, portioning, presentation, and ticket times throughout the shift.
- Ensure food is prepared and served according to Duckstache Hospitality standards.
- Must learn and be knowledgeable of all food menus, recipes, ingredients, and preparation procedures.
- Assist with sushi bar and kitchen service, including receiving orders through the POS system and ensuring food is properly expedited and delivered to the FOH team.
- Maintain cleanliness, organization, and proper sanitation throughout the kitchen and BOH areas.
- Ensure proper food handling, storage, labeling, and temperature control procedures are followed.
- Assist with inventory management, product receiving, and maintaining appropriate product levels.
- Assist managers and chefs with product ordering and maintaining accurate inventory.
- Participate in the research and development of new products, menu items, and recipes as assigned by managers and chefs.
- Train and assist in the development of new BOH employees.
- Implement processes, procedures, and protocols established by the management and chef teams.
- Serve as a liaison between the BOH and FOH throughout the shift to ensure clear communication and efficient service.
- Communicate any food quality, staffing, equipment, inventory, or operational concerns to managers and chefs.
- Maintain communication through daily logs and other communication systems established by management and chefs.
- Gather and review essential operational information, including invoices, BEOs, emails, and other documents, as needed.
- Conduct oneself at the highest level and serve as an example to all BOH staff.
- Must adhere to all sanitation, safety, food handling, and health regulations.
- Must maintain and uphold all dress code and appearance standards.
- Assist with restaurant opening and closing procedures as assigned.
- Perform other duties as assigned.
Qualifications
Duckstache Hospitality requires the following minimum qualifications to successfully perform the position of BOH Shift Lead.
Language
- Fluent speaking, reading, and writing in English.
- Spanish preferred but not required.
Qualifications
- 3+ years of relevant restaurant or culinary experience.
- Previous leadership or supervisory experience in a restaurant or kitchen environment preferred.
- Texas Food Handlers Certification.
- Strong knowledge of food preparation, food safety, sanitation, and kitchen operations.
- Strong understanding of recipe execution, food quality, and presentation standards.
- Ability to memorize recipes and menu items.
- Strong communication and leadership skills.
- Ability to train and coach BOH employees.
- Ability to remain organized and composed in a fast-paced kitchen environment.
- Strong attention to detail.
- Ability to multitask and prioritize responsibilities during service.
- Flexible availability and willingness to work weekends.
- Ability to work effectively as part of a team.
- Ability to communicate effectively with both BOH and FOH teams.
Working Conditions
The incumbent will be working in a restaurant setting, primarily in the kitchen and BOH areas, with regular interaction with the FOH team. Potential hazards include, but are not limited to, cuts, slipping, tripping, falls, burns, and exposure to hot surfaces and equipment. Frequent hand washing is required.
Physical Requirements
The incumbent is required to stand and walk for long periods of time. The incumbent is regularly required to talk and hear. This position is very active and requires the ability to lift up to 40 lbs. and constantly move around the restaurant, kitchen, and BOH areas.
