Tabla Indian Restaurant is a growing Indian dining brand known for authentic flavors, fresh ingredients, and a high-quality guest experience. We are looking for an experienced and skilled Indian Curry Main Chef to join our kitchen team at our Boston location.
Job Responsibilities
- Prepare and cook Indian curry dishes according to restaurant recipes and quality standards.
- Manage the curry station during lunch and dinner service.
- Prepare vegetarian and non-vegetarian curries, gravies, sauces, and base preparations.
- Handle dishes such as butter chicken, chicken tikka masala, saag, korma, vindaloo, dal, paneer curries, lamb curries, and other Indian specialties.
- Maintain consistency in taste, texture, spice level, presentation, and portion size.
- Prepare curry bases, masalas, marinades, and daily kitchen prep as required.
- Ensure all dishes are cooked fresh and served on time during busy service hours.
- Monitor food quality, freshness, and proper storage of ingredients.
- Follow food safety, hygiene, and sanitation standards at all times.
- Keep the curry station clean, organized, and ready for service.
- Work closely with the Head Chef and kitchen team for smooth daily operations.
- Assist with inventory, ordering needs, and proper stock rotation.
- Support catering, event orders, weekends, and high-volume restaurant service when required.
Requirements
- Previous experience as an Indian Curry Chef or Main Chef is required.
- Strong knowledge of Indian curries, gravies, spices, masalas, and cooking techniques.
- Indian restaurant experience is strongly preferred.
- Ability to manage the curry station independently.
- Must be able to maintain consistent taste and quality under pressure.
- Ability to work in a fast-paced kitchen environment.
- Must be reliable, punctual, and a strong team player.
- Must be able to stand for long hours and work flexible shifts, including evenings, weekends, and holidays.
- Ability to follow recipes, kitchen standards, and food safety guidelines.
Preferred Skills
- Experience preparing North Indian curries, lentils, paneer dishes, chicken, lamb, seafood, and vegetarian items.
- Knowledge of spice balancing, gravy preparation, and batch cooking.
- Ability to handle high-volume service while maintaining quality.
- Strong attention to cleanliness, taste, presentation, and kitchen organization.
- Catering or banquet kitchen experience is a plus.
