Position Overview
The Meat & Fish Fabricator is responsible for the proper breakdown, fabrication, portioning, and preparation of meat and seafood for service. This position requires strong knife skills, attention to detail, product knowledge, and the ability to work efficiently in a professional, high-volume kitchen.
Key Responsibilities
- Fabricate and portion beef, pork, poultry, and other meats according to Casa Brasa standards.
- Break down whole fish and other seafood while maximizing product utilization.
- Prepare steaks, chops, fillets, and other cuts with consistent sizing and presentation.
- Maintain proper yields and minimize product waste.
- Follow recipes, specifications, and portion-control standards.
- Maintain proper labeling, storage, rotation, and temperature control of all proteins.
- Maintain a clean, organized, and sanitary fabrication area.
- Properly care for and maintain knives, equipment, and other tools.
- Work closely with the culinary team to ensure all proteins are prepared and available for service.
- Follow all food safety, sanitation, and HACCP standards.
- Support additional kitchen prep and production needs as required.
Ideal Candidate
- Previous experience as a meat cutter, butcher, fish fabricator, or protein prep cook in an upscale, fine dining, steakhouse, or high-volume restaurant.
- Strong knife skills and knowledge of proper fabrication techniques.
- Experience breaking down whole fish and fabricating various cuts of meat preferred.
- Strong understanding of protein handling, storage, and food safety.
- Excellent attention to detail and consistency.
- Ability to work efficiently while maintaining quality and cleanliness.
- Ability to lift and move boxes or cases of product as needed.
- Reliable, team-oriented, and comfortable working in a fast-paced kitchen.
Physical Demands:
- Ability to work in a standing position for 8-10 hours per day
- Ability to lift 60lbs (50lbs overhead)
- Stand for a long period of time.
- Be able to kneel, crouch, stoop, twist, reach, push, pull and grasp throughout the day.
- Hearing and communicating in person or over telephone.
