Omakase Line Cook – Kinme Omakase
Kinme Omakase is seeking an experienced, detail-oriented, and personable Omakase Line Cook to join our culinary team.
This is a unique culinary position combining hot-kitchen execution, fine-dining presentation, and direct guest interaction in an intimate counter-style omakase setting.
Our Chef de Cuisine (CDC) is responsible for developing the menu, recipes, and preparations for the hot dishes and will work closely with the Line Cook during prep. During dinner service, the Line Cook will take responsibility for executing and presenting those dishes at the counter while working closely with our two Sushi Chefs to create a seamless omakase experience.
Schedule:
3:00 PM – 11:00 PM
Responsibilities:
- Work closely with the Chef de Cuisine during prep to learn and prepare each menu component according to the chef’s specifications
- Assist the CDC with daily prep and mise en place
- Understand the ingredients, cooking techniques, plating, and story behind each dish
- Take responsibility for executing the CDC’s hot dishes during omakase service
- Cook, finish, plate, and garnish dishes with precision and consistency
- Perform final preparation and presentation of dishes in front of guests at the omakase counter
- Present dishes to guests in English, clearly explaining the ingredients, preparation, and story or inspiration behind each dish
- Work closely with the two Sushi Chefs during service to coordinate timing and maintain the flow of the omakase experience
- Communicate confidently and professionally with guests in an intimate counter setting
- Execute and present dessert as part of the omakase menu
- Prepare and serve matcha at the conclusion of the dining experience
- Maintain a clean, organized, and professional workstation throughout service
- Follow all food safety, sanitation, and handling procedures
- Remain through the end of service to complete closing duties, thoroughly clean the kitchen, and reset the workspace for the following day
What We’re Looking For:
- Professional kitchen experience; Japanese cuisine, fine dining, tasting menu, or omakase experience is strongly preferred
- Strong hot-line cooking skills and solid understanding of professional kitchen techniques
- Excellent attention to detail and consistency
- Ability to learn and precisely execute dishes developed by the Chef de Cuisine
- Strong conversational English and the ability to confidently present and explain dishes directly to guests
- Comfortable cooking, plating, presenting, and speaking in front of guests
- Ability to learn and accurately communicate ingredients, preparation techniques, and the story behind each dish
- Strong communication and teamwork skills, particularly when coordinating service with the Sushi Chefs
- Calm, organized, and professional under pressure
- Strong standards of cleanliness and kitchen organization
- Reliable, punctual, and team-oriented
- Willing to participate fully in prep, service, and end-of-night cleaning
This is an ideal position for a cook who enjoys both culinary execution and guest interaction. The Line Cook serves as the bridge between the Chef de Cuisine’s menu and the guest experience—executing the chef’s dishes during service, presenting them at the counter, and communicating the ingredients and story behind each course while working alongside our Sushi Chefs.
Pay: From $25.00 per hour
