Lead Cook

Dale Rogers Training Center (DRTC) is seeking a skilled and dependable Senior Cook to support high‑volume food production, ensure recipe accuracy, maintain serving lines, and uphold strict food safety standards. This role plays a key part in daily meal preparation and kitchen operations within government and commercial facilities.
Responsibilities:
- Prepare all assigned food items according to AF recipes and production standards
- Review AF production logs and follow special instructions before each shift
- Maintain a fully stocked serving line and ensure proper portion control
- Brief line servers on serving procedures and utensil use
- Communicate menu changes and operational needs to the Shift Supervisor
- Sign out supplies from the storeroom and return unused rations after meals
- Clean and maintain all kitchen equipment and prep areas after each use
- Document leftovers and report to Supervisor within required timeframes
- Coordinate with incoming Senior Cook regarding menu changes and remaining tasks
- Report equipment malfunctions or safety concerns immediately
- Attend scheduled meetings and follow all dress code requirements
- Perform additional duties as assigned
Qualifications:
- 3+ years of food service experience, including line cook or lead cook roles
- Completion of a certified food training program or culinary arts degree preferred
- Leadership experience preferred, but not required
- Strong knowledge of current culinary trends
- Ability to read menus, recipes, and follow standardized procedures
- Ability to work independently with minimal supervision
- Strong communication, organization, and time‑management skills
Requirements:
- Must be 18 years or older
- Must have high volume, full-service or scratch-kitchen experience
- Must pass all required background checks and meet badge requirements
- Must complete DRTC/TWP Food Sanitation & Safety Course prior to employment
- Must obtain Contractor Badge and provide vehicle registration
- Must be able to stand up to 8 hours
- Must be able to lift 50 lbs. vertically and 25 lbs. horizontally
- Must be able to move items up to 100 feet
- Must be able to perform bending, twisting, kneeling, reaching, pushing, pulling, and lifting
- Must adhere to all safety procedures, including two‑person lift policy
