Job Summary
The Kitchen Prep Specialist is responsible for preparing ingredients and food items needed for daily restaurant operations. This position helps ensure the kitchen is organized, stocked, clean, and ready for service. The ideal candidate is dependable, efficient, able to follow recipes and instructions, and committed to food safety and cleanliness.
ResponsibilitiesFood Preparation
- Prepare ingredients and food items according to restaurant recipes and standards.
- Wash, peel, cut, portion, measure, and organize ingredients as needed.
- Prepare sides and other menu items for daily service.
- Portion food accurately to maintain consistency and control food costs.
- Label, date, cover, and properly store all prepared foods.
- Rotate food using FIFO (First In, First Out) procedures.
- Check food quality and notify management of any spoiled, damaged, or questionable products.
- Keep prep levels stocked based on anticipated business needs.
- Communicate with cooks and management when ingredients or supplies are running low.
- Complete assigned prep work before service whenever possible.
Food Safety
- Follow all food safety, sanitation, and health department requirements.
- Maintain proper food temperatures during preparation, cooling, and storage.
- Prevent cross-contamination by using proper utensils, cutting boards, gloves, and storage procedures.
- Wash hands and change gloves as required.
- Keep raw and ready-to-eat foods properly separated.
- Follow management instructions regarding cooling, reheating, holding, and storage procedures.
Cleaning & Organization
- Keep the prep area clean and organized throughout the shift.
- Clean and sanitize prep tables, cutting boards, utensils, equipment, and work surfaces.
- Clean spills and messes immediately.
- Sweep and mop assigned kitchen areas as needed.
- Keep the walk-in refrigerator, freezer, dry storage, and prep areas organized.
- Assist with dishes and general kitchen cleaning when needed.
- Take out trash and cardboard as assigned.
- Participate in scheduled deep-cleaning duties.
Teamwork & Workplace Expectations
- Arrive on time, clocked in, and ready to work at the scheduled start time.
- Follow instructions from managers and kitchen leadership.
- Work efficiently and maintain a sense of urgency during busy periods.
- Communicate respectfully with coworkers and management.
- Help other kitchen positions when assigned.
- Follow all restaurant policies regarding attendance, cell phones, breaks, cleanliness, uniforms, and workplace conduct.
- Complete assigned tasks accurately rather than marking work complete before it has actually been performed.
Qualifications
- Previous restaurant, kitchen, or food-prep experience preferred but not required.
- Ability to follow recipes and written/verbal instructions.
- Basic knowledge of food safety and sanitation practices.
- Ability to use knives and standard commercial kitchen equipment safely.
- Ability to work independently and as part of a team.
- Dependable attendance and punctuality.
- Ability to work in a fast-paced restaurant environment.
- California Food Handler Card required within the applicable legal timeframe.
Physical Requirements
The employee must be able to:
- Stand and walk for extended periods.
- Bend, reach, twist, and perform repetitive movements.
- Safely lift and carry food, supplies, and kitchen equipment.
- Work around hot equipment, refrigeration, steam, water, and other normal commercial-kitchen conditions.
