Kitchen Team Leader
Position Overview
The Kitchen Team Leader is responsible for overseeing daily kitchen operations during assigned shifts while actively participating in food preparation and production. This position ensures that all menu items are prepared according to established recipes, quality standards, food safety and brand expectations.
As a key member of the culinary team, the Kitchen Team Leader provides leadership and direction to line cooks and kitchen staff, supports operational efficiency, maintains a clean and organized kitchen, and contributes to delivering exceptional dining experiences for hotel guests and visitors.

Principal Responsibilities
Kitchen Leadership & Food Preparation
· Lead daily kitchen operations during assigned shifts.
· Prepare, cook, and present food according to standardized recipes and presentation guidelines.
· Ensure consistency in food quality, portion control, and appearance.
· Coordinate food production to ensure timely service during breakfast, lunch, dinner, banquets, and special events.
· Monitor food preparation to maintain quality and efficiency throughout service.
Food Quality & Safety
· Ensure compliance with all food safety, sanitation, and health department regulations.
· Maintain proper food handling, labeling, storage, and temperature controls.
· Conduct regular inspections of food quality and kitchen cleanliness.
· Minimize food waste through proper production planning and inventory rotation.
· Ensure compliance with HACCP principles and company food safety standards.
Team Leadership & Training
· Provide daily guidance and directions to cooks and kitchen support staff.
· Assist in training new culinary team members on recipes, procedures, equipment operation, and safety practices.
· Promote teamwork, accountability, and a positive work environment.
· Communicate production needs and operational priorities with the Executive Chef or Kitchen Manager.
· Assist in scheduling workflow during busy service periods.
Inventory & Cost Control
· Assist with inventory counts and stock rotation using FIFO methods.
· Monitor ingredient usage to reduce waste and control food costs.
· Notify management of inventory shortages and product quality concerns.
· Ensure proper storage of food and supplies.
Operational Support
· Assist with banquet, catering, and special event food production.
· Ensure kitchen equipment is properly cleaned, maintained, and reported for repair when necessary.
· Maintain organized workstations before, during, and after service.
· Collaborate with Stewarding, Front of House, Purchasing, and other departments to support hotel operations.
· Support additional culinary projects and operational needs as assigned.
Qualifications & Experience
· High school diploma required; culinary training preferred.
· 3+ years of culinary experience.
· Previous Kitchen Team Leader or supervisor experience preferred.
· Food Handler Certification required or ability to obtain.
· Bilingual English/Spanish preferred.
· Availability to work flexible schedules, including evenings, weekends, and holidays.
Skills & Competencies
· Strong culinary knowledge with the ability to consistently prepare and present high-quality food in accordance with established recipes and hotel standards.
· Leadership skills with the ability to motivate, coach, and support kitchen team members while fostering a collaborative work environment.
· Excellent organizational and time management skills with the ability to prioritize tasks and perform efficiently in a fast-paced kitchen.
· Thorough understanding of food safety, sanitation and proper food handling procedures.
· Strong attention to detail and commitment to food quality, consistency, portion control, and presentation.
· Effective communication and problem-solving skills with the ability to remain calm and make sound decisions under pressure.
· Dependability, professionalism, and flexibility to adapt to changing operational needs while maintaining a positive attitude and commitment to exceptional guest experiences.
