Job Summary
The Overnight Cook is responsible for preparing and cooking high-quality food during overnight operations while ensuring consistency, food safety, and adherence to brand standards. This role maintains production levels, follows standardized recipes, supports overnight culinary operations, and ensures all kitchen areas remain clean, organized, and fully stocked for the next day’s service. The ideal candidate is detail-oriented, dependable, and committed to delivering exceptional culinary experiences in a fast-paced hospitality environment.
Job Family Core Work Activities
- Prepare and cook menu items according to recipes, quality standards, and presentation guidelines during overnight operations
- Maintain production levels based on forecasted business needs while minimizing food waste
- Prepare ingredients by portioning, chopping, measuring, labeling, dating, and properly storing food items
- Operate kitchen equipment including ovens, grills, stoves, fryers, microwaves, and other culinary equipment safely and efficiently
- Monitor food quality, cooking temperatures, and portion control while following HACCP, FIFO, and food safety standards
- Maintain clean, organized, and sanitized workstations, refrigerators, freezers, equipment, and storage areas
- Set up and break down kitchen stations, ensuring all mise en place and supplies are prepared for service and the following shift
- Properly store, rotate, label, and utilize leftover products in accordance with company procedures
- Communicate effectively with chefs and culinary team members to ensure efficient overnight operations and guest satisfaction
- Follow all company safety, sanitation, and health regulations while maintaining a safe and productive work environment
