Sous Chef Responsibilities:
-Produce consistent freshly prepared food to existing recipes
-Create and produce daily dinner specials with creative descriptions and type them onto printed menus. Being able to write/type a creative menu item description is an important skill for this position.
-Assist Executive chef with recipe food costing and implementing new cost control measures
-Be a part of the team creating new standardized systems and procedures to increase efficiency and consistency
-Be a part of the team maintaining sanitation standards
-Provide input on new menu item creation
-Work Under the direction of the Owner and Executive Chef while offering creative solutions to daily problems while creating/implementing new operational systems and procedures
This position is ideal for a recent culinary school graduate looking for a sous chef position, an experienced cook who is ready to make the jump to sous chef, or an experienced sous chef looking to be able to grow into a chef de cuisine position within the next 12 months. We are looking to find the right person who can blossom into a position given some flexibility and space to grow. An ideal candidate is someone who wants to take significant part in a growth spurt of a long standing organization, while learning through doing under the guidance of an experienced chef/owner, and Executive chef. Long term employment offers the opportunity to advance to higher positions within the organization as we are growing. If you prefer a position with a short term employment to gain sous chef experience, while growing as a chef, we will also consider you for our position.

The Cortlandt Colonial Manor is a family owned and operated 90 seat restaurant and 200 seat catering venue run under the direction of a second generation chef/owner. Now in our 48th year, we are embarking on a rebirth of our restaurant and seek to add the right individual to our team to grow with us.
