The Steward is responsible for the overall organization and cleanliness of the restaurant (FOH and BOH). One of the steward’s main responsibilities is the purchasing, receiving, and organization of food, cleaning, and FOH products (i.e. linens, plateware, glassware, silverware, etc). It is the steward’s responsibility to deal with purveyors on a daily basis to ensure the proper quality and price of all products ordered. In addition to being responsible for maintaining the food cost in an acceptable range, the steward is also responsible for keeping an inventory of both FOH and BOH products.
Responsibilities:
Primary duties and responsibilities include, but are not limited to, the following:

Day-to-day cleaning, organizing, maintenance and repair of the entire restaurant and has the dishwasher/porter crew at his disposal to help him carry out these tasks.

Responsible for the dishwashers/porters which includes their hiring, training, scheduling, monitoring hours and overtime, etc.

Responsible for inventory and receiving of both FOH and BOH products.

Basic food and restaurant product knowledge as well as, kitchen operations.

Responsible for enforcing strict health and hygiene standards.

Responsible for enforcing and maintaining HAACP standards throughout the BOH.

Maintain a positive, pleasant, attitude every shift
