Job Summary:
Our creative and artistic culinary company works with an incredible events location in the heart of Hollywood. We are seeking a talented and experienced Executive Sous Chef to oversee operations and execution of large scale galas and celebrity film screenings. This will be a hands-on job requiring applicants to be able to organize, delegate, and spear-head all culinary preparations, planning, and execution of this innovative company. Our ideal candidate is creative, offering ideas for new menu ideas, as well as being able to execute menu offerings diligently and on time while overseeing a team of cooks to ensure all standards are met.
As the Executive Sous Chef, you will collaborate closely with our owner/acclaimed Chef, taking direction and working together to deliver exceptional dining experiences for the various styles of events. This role requires someone who is a great listener, eager to work directly with ownership, and passionate about executing each event to the highest standard. We are looking for someone who thrives on a challenge, can take direction with a positive attitude, and also demonstrates initiative to take charge when needed.
Experience in fine dining with a focus on high-level culinary execution is required. Experience with Galas, tastings and R&D is required.
Key Responsibilities:
· Event Planning and Execution:
o Manage all logistics for events, including preparation, transportation, and final setup.
o Develop a detailed, minute-by-minute event plan, outlining each phase of the event from start to finish.
o Review and execute Banquet Event Orders (BEOs), ensuring all client specifications are met.
o Coordinate with the sales team and owner to plan and accommodate various catering experiences.
· Menu and Culinary Management:
o Oversee all food preparation, ensuring high-quality and timely production.
o Work with the owner/chef to develop and innovate the menu, including research and development of new dishes.
o Ensure that all food-related items are ordered and received in correct quantities and meet quality standards.
o Maintain and improve food safety protocols, ensuring compliance with health regulations.
· Staff Management and Leadership:
o Supervise and lead a team of culinary staff, providing training and support to enhance performance and efficiency.
o Communicate effectively with the culinary team to ensure the smooth operation of all catering events.
o Maintain a productive and positive work environment by fostering teamwork and morale.
· Operations and Logistics:
o Oversee all kitchen and transport operations for off-site events, ensuring seamless food delivery and setup.
o Ensure that all equipment needs are met and organized for each event, coordinating with the appropriate parties.
o Oversee the receiving of all orders, ensuring the correct quality and quantity of food and supplies.
· Quality Control and Client Satisfaction:
o Ensure all food is prepared and presented according to the highest standards of quality and safety.
o Maintain a strong focus on client satisfaction, making adjustments to service and menu offerings as needed to meet client expectations.
Qualifications:
· Proven experience as an Executive Chef, Sous Chef, Chef de Cuisine, or in a similar leadership culinary role.
· Expertise in off-site and on-site catering operations and logistics.
· Strong understanding of Banquet Event Orders (BEOs) and event execution.
· Experience in fine dining with a focus on high-level culinary execution is required.
· Proven ability to execute at a high level of quality and precision in fast-paced, high-pressure environments.
· Excellent leadership and team management skills.
· In-depth knowledge of food safety regulations and best practices.
· Ability to work in a fast-paced, high-pressure environment.
· Strong organizational skills and attention to detail.
· Culinary degree or equivalent experience preferred.
· Must be open to receiving direction from and working closely with the owner/chef to ensure the success of each event.
· A passion for tackling challenges and taking initiative to drive success.
Working Conditions:
· Must be able to work flexible hours, including evenings and weekends, as required for catering events.
· Ability to travel to off-site event locations as needed.
· Physical demands include standing for extended periods, lifting heavy items, and transporting food/equipment to event sites.
