Tonno Nero is a chef-driven, dinner-only fine-dining restaurant opening in Fort Lauderdale. We are building a team that believes genuine hospitality begins with how we care for one another. Our service is polished but never rehearsed—professional, warm, attentive, and human.
POSITION SUMMARY
The Floor Manager is a visible, hands-on hospitality leader who guides dinner service with calm confidence, emotional intelligence, and genuine care. This leader protects the complete guest journey, supports the front-of-house team, and works closely with culinary and beverage leadership to deliver intentional, Forbes-inspired service.
We are looking for someone who loves this industry and understands that people make the place. The right person leads without ego, notices the small details, enjoys developing others, and creates meaningful experiences for both guests and team members.
RESPONSIBILITIES
- Lead front-of-house dinner operations and maintain Tonno Nero’s luxury service standards.
- Maintain an active floor presence and anticipate guest and team needs throughout service.
- Lead polished pre-shift meetings covering reservations, VIPs, menu updates, wine and beverage features, and service priorities.
- Support captains, sommeliers, bartenders, hosts, server assistants, food runners, and culinary team members as one coordinated team.
- Oversee reservations, seating flow, table pacing, special occasions, VIP recognition, and guest preferences.
- Monitor food and beverage timing, table maintenance, presentation, and communication throughout the guest journey.
- Take ownership of guest concerns with warmth, urgency, discretion, and thoughtful follow-through.
- Coach and develop the team through respectful, real-time feedback and hands-on support.
- Uphold grooming, cleanliness, sanitation, safety, and health-department readiness.
- Complete opening and closing procedures, floor inspections, shift documentation, and management handovers.
- Support private dining, events, training, scheduling input, and opening-readiness priorities.
- Work closely with the chefs and beverage leadership to protect quality, accuracy, pacing, and hospitality.
QUALIFICATIONS
- Leadership experience in luxury fine dining, a Forbes Five-Star environment, or a comparable high-touch hospitality operation.
- Strong understanding of intentional service, sequence of service, guest recognition, and service recovery.
- Wine knowledge is strongly preferred, including confidence discussing major regions, varietals, pairing fundamentals, and proper wine service.
- Familiarity with spirits, cocktails, and nonalcoholic beverage programs is preferred.
- Experience leading, coaching, and motivating a diverse front-of-house team.
- Polished, genuine, approachable communication with guests and colleagues.
- Calm decision-making and strong organization in a fast-paced dinner-service environment.
- Reservation and POS system experience; OpenTable and Toast familiarity are preferred.
- Availability for nights, weekends, holidays, pre-opening orientation, and training.
- A team-first mentality, humility, curiosity, and a genuine desire to keep learning.
