Responsibilities
- Lead the sushi kitchen by supervising daily food preparation, ensuring the highest standards of quality, presentation, and authenticity.
- Develop innovative sushi menus that highlight fresh ingredients and creative flavor combinations while maintaining cost control and inventory management.
- Oversee food safety sanitizing procedures, ensuring compliance with all health regulations and safety standards.
- Manage kitchen operations including shift management, inventory control, and food handling to optimize efficiency and minimize waste.
- Supervise and mentor kitchen staff, fostering a collaborative environment that promotes skill development, teamwork, and excellent service delivery.
- Coordinate with the restaurant management team to plan catering events, banquets, and special dining occasions requiring sushi or Asian cuisine expertise.
- Maintain meticulous records of food production processes, inventory levels, and sanitation practices to ensure smooth operations.
Requirements
- Proven experience as a Sushi Head Chef or similar role within fine dining or high-volume restaurant settings.
- Extensive culinary experience with strong skills in food preparation, cooking techniques, and kitchen management.
- Demonstrated leadership abilities with supervising experience in a fast-paced environment.
- Knowledge of food safety sanitizing procedures, dietary department standards, and health regulations.
- Familiarity with inventory management, cost control, menu planning, and shift management.
- Experience in managing teams as a chef within the food industry; previous restaurant or catering experience is highly valued.
- Strong understanding of hospitality principles, food service management, and customer satisfaction strategies.
- Additional skills such as banquet experience, managing food service operations, bartending knowledge, and catering coordination are considered advantageous.
