What You'll Do (The Stations)
We cross-train our team so everyone can build a well-rounded culinary foundation. Depending on the shift, you will own one of our primary stations in accordance with our kitchen Standard Operating Procedures (SOPs):
- Fry Station: Manage "pull-and-sanitize" fryer protocols, ensuring perfect temperature control, crispy execution, and flawless timing for all fried favorites.
- Mid / Entree: Own the heart of the line (including flat-top and char-grill). You’ll handle the heavy-hitting entrees, burgers, and club classics, executing precise cook temps and tight ticket-grouping.
- Salad Station: Keep it fresh, fast, and beautiful. Own the assembly of crisp salads, cold appetizers, and final plate presentations.
- Pizza Station: Lead our dough management and storage protocols. Stretch, top, and bake pizzas to perfection in a fast-paced environment.
- Prep Kitchen: Execute prep recipes, portioning, and station readiness checklists to set the line up for absolute success.
- Banquets & Events: Assist in prepping and plating buffet-style and plated banquet meals for tournament lunches, weddings, and member events.
Key Responsibilities
- SOP & Safety Adherence: Maintain stellar food safety and sanitation standards. Follow daily opening/closing readiness checklists and station-specific cleaning procedures.
- Consistency under Pressure: Maintain speed and plate presentation standards during busy lunch rushes, post-tournament waves, and dinner services.
- Active Collaboration: Communicate clearly with front-of-house staff and fellow line cooks to ensure tickets fly out smoothly and accurately.
- Stay Curious: Participate in menu brainstorming, try your hand at daily specials, and take advantage of opportunities to learn new culinary techniques.
Who You Are
- Experienced or Highly Motivated: 3-5 years of Line Cook or Prep experience is required, but a stellar work ethic and a desire to learn go a long way.
- Cool Under Fire: You thrive in a fast-paced, high-volume environment (especially when a golf tournament or banquet rolls in).
- A Team Player: You show up on time, take ownership of your station, and are always ready to lend a hand to a teammate.
- Adaptable: You enjoy variety—shifting gears from a busy Friday night pizza-and-burger line to a 150-person buffet prep on Saturday morning.
