The Assistant Food & Beverage Director supports the Director of Food & Beverage in overseeing the daily operations of all Food & Beverage outlets within the hotel. This position provides leadership and direction to restaurant, bar, banquet, room service, and other F&B operations while ensuring exceptional guest service, operational efficiency, associate engagement, and financial performance.
The Assistant Food & Beverage Director is responsible for maintaining brand standards, developing and coaching F&B leaders and associates, controlling labor and operating expenses, monitoring food and beverage quality, and ensuring compliance with company policies and applicable health, safety, and alcohol regulations.
Operations
- Assist in overseeing the daily operations of all hotel Food & Beverage outlets.
- Ensure restaurants, bars, banquets, room service, and other F&B areas operate efficiently and consistently.
- Maintain high standards of food quality, beverage quality, cleanliness, presentation, and service.
- Conduct regular inspections of F&B outlets and address operational deficiencies.
- Ensure compliance with hotel, company, and brand standards.
- Assist with menu development, pricing, promotions, and seasonal offerings.
- Coordinate F&B operations with Rooms, Sales, Engineering, Housekeeping, and other departments.
Leadership & Associate Development
- Supervise, coach, and develop F&B managers, supervisors, and associates.
- Provide ongoing feedback and performance coaching.
- Assist with interviewing, hiring, onboarding, training, and scheduling F&B associates.
- Promote teamwork, accountability, and a positive associate culture.
- Ensure required training and certifications are completed and maintained.
- Assist with succession planning and development of future F&B leaders.
Financial Management
- Assist with achieving departmental revenue and profitability goals.
- Monitor labor costs and staffing levels based on occupancy, business volume, and forecast.
- Review daily sales, labor, and operational reports.
- Assist with budgeting, forecasting, and expense management.
- Monitor food and beverage costs and identify opportunities to reduce waste.
- Control inventory and ensure proper purchasing, receiving, storage, and product rotation.
- Review banquet and outlet performance and recommend corrective actions when needed.
Banquets & Events
- Assist with oversight of banquet food and beverage operations.
- Ensure events are properly staffed and executed according to BEO requirements.
- Coordinate with Sales and Conference Services to ensure client expectations are met.
- Monitor banquet setup, service, food quality, bar operations, and event breakdown.
- Assist with post-event reviews and addressing client concerns.
Guest Service
- Maintain a visible presence throughout F&B operations.
- Respond promptly to guest complaints and service recovery opportunities.
- Ensure associates understand and consistently deliver the hotel's service standards.
- Monitor guest feedback and identify opportunities to improve the overall dining experience.
- Build relationships with repeat guests, VIPs, meeting planners, and hotel clients.
Compliance & Safety
- Ensure compliance with health department, OSHA, alcohol service, food safety, and company requirements.
- Maintain appropriate food handling and sanitation standards.
- Ensure responsible alcohol-service practices are followed.
- Investigate and report accidents, injuries, and guest incidents as required.
- Maintain required F&B records, logs, and documentation.
Requirements:
- Physical Requirements (In-Office Role)
- Ability to work in a standard office environment.
- Prolonged periods of sitting at a desk and working on a computer. (6-8 hours a day)
- Occasional standing and walking throughout the workday.
- Frequent fine motor skills, use of hands and fingers for keyboarding/typing, utilizing a mouse or trackpad, writing, and operating office equipment.
- Ability to communicate effectively verbally and in writing.
- Occasionally required to stand, walk, bend, reach, or carry items.
- Ability to lift and/or move 10–25 pounds as needed (e.g., files, office supplies).
- Visual ability to read from a computer screen and printed materials including close visual focus for extended periods and color differentiation (for certain roles).
