Summary
We are seeking a passionate and experienced Director of Dining Services to oversee our dining operations at El Castillo. This role is vital in ensuring that our residents enjoy high-quality dining experiences that align with our commitment to exceptional service and care.
Some of the responsibilities include, but not limited to are:
Food and Beverage Oversight:
- Manage service aspects in all food and beverage assigned areas and events.
- Conduct regular quality assurance checks on all food preparation, presentation and service delivery to uphold high standards of nutrition and resident satisfaction.
- Plan, evaluate, and improve the efficiency of department processes and procedures to enhance speed, quality, efficiency, and output.
- Collaboratively work with Executive Chefs on menus and adjust based on resident feedback.
- In collaboration with the dining services team, plan and implement special events – holiday meals, wine tastings, guest chefs etc.
- Lead food and beverage annual budget development and monthly budget goals
- Oversee purchasing and controlling inventory costs for food, beverages, equipment, and supplies.
- Accomplish financial objectives by adhering to a departmental budget, scheduling expenditures, analyzing variances, and initiating corrective actions.
- Utilize organizational systems such as Toast and Matrix to capture data and resident billing
Regulatory and Human Resource Oversight:
- Ensures dining environment always meets regulatory requirements.
- Monitor and document employee compliance with Safe Food Handling certification requirements.
- Assure compliance with all health and food regulations.
- Provide supervision, training and guidance to employees in accordance with El Castillo policies and State/Federal employment laws.
- Maintain employee work schedules including assignments, job rotation, training, vacations and paid time off, cover for absenteeism, and overtime scheduling.
- Provide effective performance feedback through employee recognition, rewards, reviews, and disciplinary action, with the assistance of Human Resources when necessary.
- Communicate regularly and effectively with other managers, directors, general manager, and other designated contacts within the organization.
- Ensure customers and employees are treated courteously, safely, and efficiently.

- Safety orientated and able to train employees on safety procedures of equipment used.
- Excellent computer skills in a Microsoft Windows environment. Must include Excel, Word, and Outlook.
- General knowledge of various employment laws and practices and employee relations.
- Must work Weekends and Holidays as needed
- Maintain a valid Driver’s License.
Qualification
- Bachelor's degree in Culinary, Business, Hospitality or related field.
- Bi-lingual preferred.
- Five to seven years experience in food and beverage operation in a high end resturant or hotel setting.
- Previous P&L accountability or contract-managed service experience is desirable.
- Strong supervisory, leadership, management, and coaching skills
- Strong communication skills, both written and verbal
- Ability to communicate on various levels to include management, client, customer, and employee levels.
- Excellent financial, budgetary, accounting, and computational skills
- Proficient computer skills to include various computer programs, Microsoft Office programs, e-mail, and the Internet.
