What you will have an opportunity to do:
Renata’s Hearth serves contemporary Latin cuisine drawing inspiration from Mexico, Spain, Portugal, and Latin America with a focus on southwest ingredients and old world preparations to include smoking and grilling traditions. The name Renata means ‘born again’ and this reincarnation is a thank you to the bold and creative women who lived vibrantly beyond the rules.
As a Lead Line Cook for Renata's Hearth, you will be responsible for maintaining and setting up food production and quality control of all meat, fish, poultry, sauces, stocks, seasoning and all other food items prepared in the different kitchen stations. Specifically, this includes, but is not limited to, the following duties:
Sauté dishes to order following the restaurants recipes and plating guidelines.
Prepare all food items according to standard recipes and/or as specified on guest check to ensure consistency of product to the guest. Visually inspect, select and use only food items ideal cooking, in preparation of all menu items.
Maintain consistency and work as a team.
Check and control the proper storage of product, monitoring age and condition of all food items to rotate and maintain highest quality.
Keep all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations.
Prepare daily requisitions for supplies and food items for production.
Read and employ math skills to follow recipes.
The ideal candidate will have grill and Sauté. This is a full-time position and you must have availability to work evenings, nights, weekends, and holidays.
What are we looking for?
EDUCATION
High School Diploma or equivalent
Graduate of an Apprenticeship or accredited Culinary School, preferred
EXPERIENCE
At least three (3) years of cooking experience in a professional, fast-paced kitchen
Prior hotel / resort experience, preferred
Upscale / luxury dining experience, preferred
LICENSES OR CERTIFICATES
Maricopa County Food Handler Card
ServeSafe Food Handler Certification, preferred
