About Dunton Hot Springs
Dunton Hot Springs is a small luxury resort nestled deep in the San Juan Mountains of the Colorado Rockies. This perfectly restored ghost town thrives on contradictions; hand- hewn log cabins exquisitely furnished, a life-worn saloon serving food of startling quality, lung torturing trails followed by pampering massages, sensuous hot springs beneath shimmering snow banks.
The success candidate will
- Have 1 year plus experience in the same role
- Fine dining style experience is preferable, but not essential

As a Chef De Partie, you are responsible for supporting the Head and Sous Chef in the daily tasks of the kitchen. These tasks include, but are not limited to delivering consistent high-quality food, handling orders, receiving and FIFO inventory practices. Ensuring the highest standards of hygiene (personal and workspace) and professionalism while completing daily preparation and service as instructed by the chef or sous chef. Learns progressively and shows ability to grow into new works while mastering use of new products, recipes and preparation techniques.
The roll includes
- Taking care of daily food preparation and duties assigned by the superiors to meet the standard and the quality set by the Executive team.
- Coordinate daily tasks with the Sous Chef
- Ensure that the production, preparation and presentation of food are of the highest quality at all times, meeting and exceeding Serve Safe standards.
- Ensure highest levels of guest satisfaction, quality, operating and food costs on an ongoing basis
- Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation
- Follows good preservation standards for the proper handling of all food products at the right temperature
- Ensure effective communication between staff by maintaining a secure and friendly working environment
- Establishing and maintaining effective inter-departmental working relationships
- Personally responsible for hygiene, safety and correct use of equipment and utensils
- Consults daily with Sous Chef and Executive chef on the daily requirements, functions and also about any last minute events
- Daily feedback collection and reporting of issues as they arise
- Assess quality control and adhere to hotels service standard
- Minimize waste and maintain controls in product utilization to attain forecasted food cost.
- Breakdown workstation and complete closing duties according to department standards
- A car is required to work at Dunton due to the remote location. 4WD or AWD recommended.
