Country Club Rehabilitation Campus in Bellaire, Ohio is looking for a cook. Cook must provide organized, consistent and timely performance of all aspects of line execution from a restaurant model. Must also be able to take verbal orders from STNAs expediting tickets, read and execute ticket orders, and be able to perform and organize simultaneous multiple plate execution in an appealing manner at the Direction of the Dietary Manager.
The Line Cook must be able to accomplish the following duties and responsibilities to be competent in the job.
- Identify, analyze, reacts to and reports need to the department management affecting the dietary services department’s daily operating procedures
- Perform all aspects of line execution from a restaurant model (grill, sauté, fry, broil, pasta), and will be able to take verbal orders from STNA expediting tickets, read and execute ticket orders, and be able to perform and organize simultaneous multiple plate execution in an appealing and timely fashion
- Produce accurate and correct amounts of food products and menu items in a timely manner through following daily production sheets in a culinary correct manner by following standardized recipes
- Pre-prep and/or prep of all special diet textures according to standardized recipes and dietary guidelines
- Assist all other cooks if needed in preparation and line set up in advance of meal service
- Establish safe and orderly environment and maintain safety and infection control measures, i.e. proper handling of equipment (knives, pots, pans, skillets, baking sheets), proper hand washing, minimal cross-contaminations, ensures proper storage and compliant labeling of all supplies, both perishable and non-perishable
- Assist in pot, pan, dish, cutlery, and utensil washing, maintenance, and daily cleaning of kitchen area as needed and at the direction of the Dietary Manager
- Record daily refrigeration, hot food temperatures and over production of food on daily logs and at prescribed times
- Prepare work area for the next shift through posted cleaning and/or side sheets. Sheets must be presented to Dietary Manager
- Receive and store delivered products (when applicable) using standardized methods
- Demonstrate commitment to co-worker to consistently insure success of daily service flow within department
- Demonstrate strong customer service and problem solving skills
- Adhere to the Country Club Retirement Center Dietary Department, local health district and Ohio Department of Health policies, procedures, codes, rules and regulations on cleanliness and sanitation as applied to the Country Club Retirement Center facility
- Demonstrate proper hygiene and uniform code as applied to the Country Club Retirement Center facility.
