Our client, a premium specialty grocery retailer, is looking for a Butcher/Cook/Meat Clerk to join their team in Newport Beach, CA. In this versatile role, you will be responsible for cutting and preparing high-quality meat products, supporting deli and food preparation operations, and delivering outstanding customer service — all while maintaining the highest standards of food safety and cleanliness.
Key Responsibilities:
Butcher & Meat Preparation:
- Prepare, cut, trim, and package meat products according to store standards and customer specifications
- Fabricate primal and sub-primal cuts of beef, pork, poultry, and other meats
- Safely operate meat processing equipment including slicers, grinders, and band saws
- Accurately label products with weight, pricing, and required product information
- Follow proper storage, rotation (FIFO), and waste reduction practices
- Monitor inventory levels, report low stock, and assist with receiving deliveries
Customer Service & Department Operations:
- Assist customers with product selection, custom cuts, cooking recommendations, and handling concerns professionally
- Maintain high standards of quality, freshness, and food safety compliance at all times
- Keep work areas, tools, and equipment clean and sanitized per health regulations
- Support training of junior staff or apprentices as needed
Requirements:
- Proven experience as a butcher, meat cutter, cook, or deli associate in retail, wholesale, or foodservice
- Strong knowledge of meat cuts, fabrication techniques, and preparation methods including beef, pork, poultry, and seafood
- Valid Food Handler Card required
- Strong knife skills and proficiency in safely operating meat processing equipment
- Strong knowledge of food safety standards including proper temperatures, raw meat handling, cross-contamination prevention, and FIFO rotation
- Familiarity with food safety regulations and sanitation standards
- Excellent customer service and communication skills with the ability to handle customer concerns professionally
- Ability to work flexible hours including weekends and holidays
Pay & Schedule:
- Pay Rate: $20.00 – $25.00 per hour (based on experience)
- Schedule: Closing shifts, 1:00 PM – 8:30 PM
- Availability required on weekends and holidays
