Job Responsibilities:
- Prepare and maintain house-made pizza dough, including mixing, scaling, balling, proofing, fermenting, and storing according to established recipes and procedures.
- Operate and manage a wood-burning pizza oven, including fire maintenance, temperature control, and proper cooking techniques.
- Stretch, top, and bake pizzas to company standards for quality, consistency, and presentation.
- Monitor dough quality and fermentation schedules to ensure optimal product performance.
- Maintain a clean, organized, and efficient pizza station throughout service.
- Coordinate with kitchen and front-of-house staff to ensure timely and accurate order execution.
- Assist with prep work, inventory management, and receiving deliveries as needed.
- Follow all food safety, sanitation, and health department regulations.
- Contribute ideas and enthusiasm toward menu development and pizza innovation.
Qualifications:
- Minimum of two (2) years of experience as a pizza cook or similar culinary position.
- Demonstrated experience producing pizza dough from scratch.
- Proven experience operating a wood-fired or wood-burning pizza oven.
- Strong understanding of dough fermentation, hydration, and pizza-making techniques.
- Knowledge of food safety, sanitation, and proper food handling procedures.
- Ability to work efficiently in a high-volume, fast-paced kitchen.
- Excellent organizational and time-management skills.
- Serv Safe Food Handler certification preferred or required within 30 days of hire.
Physical Requirements:
- Ability to stand and walk for 8–10 hours per shift.
- Ability to lift and carry up to 50 pounds.
- Frequent reaching, bending, twisting, stooping, pushing, and pulling.
- Ability to work safely around high temperatures and live-fire cooking equipment.
- Manual dexterity and hand-eye coordination required for dough handling and pizza preparation.
