The Souse Chef/Kitchen Manager is a key player for the high profitability and top-notch customer experience for Lumberjack’s Sports Bar & Grill food & pastry products. This role is responsible for managing a high-volume kitchen operation, ensuring exceptional food quality, and leading the food and bakery team. A key element of this role is to experiment with dishes and update them to continually ensure a unique, quality meal. Success in this role will be demonstrated by serving specialty dishes that appeal to customers, entice them to return, and generate word-of-mouth. In addition, this role will assist the GM with inventory and ordering of food and supplies, control inventory & labor cost and ensure strict adherence to all corporate SOP, Human Resource, State & Federal guidelines. The Souse Chef/Kitchen Manager reports to the General Manager.
Duties
- Make decisions on matters of importance. Consult with the General Manager and/or Corporate on important matters which may have significant impacts on the success of Lumberjacks Sports Bar & Grill
- Adhere to set standards and levels to increase sales and minimize food & labor costs.
- Have a strong understanding of the local market days food trends and desires and competitive analysis.
- Develop new dishes with an approved corporate recipe template that meet the quick serve model.
- Develop and sustain a kitchen template that enables the smooth preparation of all menu items for staff.
- Serve as the lead trainer for all kitchen and bakery staff and perform daily checks to ensure that menu items are being prepared at the defined recipe specifications meeting 100% compliance of freshness.
- Coordinate performance evaluations with the GM for all hourly staff.
- In the event of the absence of the GM, AGM, or Bar Leader this role will address any front in issues requiring a manager’s assistance.
- Collaborate with the GM and ASM to prepare catered request bids based on the corporate price points. Ensure that catered menus are prepared with a high level of quality on time.
Qualifications
- An associates degree in culinary science with a minimum of three years of relevant work experience as a Kitchen Manager & Souse Chef with a portfolio of meal item creations is strongly preferred.
- Less a college degree, a High School Diploma and one-year of experience as a Kitchen Manager OR Souse Chef and able to test food items to a defined recipe to be duplicated by kitchen staff.
- Knowledge of computers (MS Word, Excel, POS).
- Proficient in the following dimensions of restaurant functions: Deep knowledge of various cooking methods, equipment and food planning and preparation with strong experience in managing large orders or catering services, catering billing/invoicing, purchasing, sanitation, security, company policies and procedures, personnel management, recordkeeping, and preparation of reports. You must possess a valid driver’s license.
