Core Responsibilities
- Expert Shucking: Safely and quickly shucking fresh oysters while achieving beautiful plating.
- Guest Interaction: Engaging with guests at the raw bar, answering questions about flavor profiles, origins, and making recommendations.
- Station Maintenance: Setting up and breaking down the raw bar station, ensuring it remains clean, well-stocked, and organized throughout service.
- Safety & Sanitation: Complying strictly with Department of Health guidelines, managing ice temperatures, and logging oyster tags.
- Team Collaboration: Assisting bartenders and back-of-house staff with prep work, restocking, and general side-work.
Qualifications
- Experience: Previous experience in high-volume, fast-paced kitchens or raw bars.
- Product Knowledge: Passion for seafood with a willingness to learn (or deep knowledge of) oyster varieties, oyster names, and tasting notes.
- Physical Stamina: Ability to lift heavy deliveries (e.g., 30+ lbs of oysters) and stand/bend for extended periods
