As a Night Cook, you close the day with the same standard of excellence with which it began. You ensure dishes continue to come out well-prepared and consistent until the last guest, while organizing the kitchen for the following morning. Your work is essential to maintaining continuity, food quality, and cost discipline through closing. Shift is from 3:30pm- 9:30/10pm.
What You Will Do
Dinner Production & Cooling
- Prepare protein batches for dinner service based on projected sales and established par levels
- Perform cooling and storage of cooked items, strictly following food safety procedures
- Measure and record food temperatures during cooking, cooling, and reheating
- Manage leftovers responsibly to minimize waste and support cost control
Food Safety & Organization
- Properly organize and rotate all food items following FIFO (First In, First Out) standards
- Maintain high food quality through closing — no shortcuts or rushed practices
- Ensure all equipment and surfaces are clean, sanitized, and organized by end of shift
- Follow all health and food safety procedures
Shift Handover & Kitchen Support
- Communicate with the morning team through clear records and notes on what was prepared and cooled
- Assist with restaurant closing duties, including cleaning different areas as needed
- Help monitor ingredient usage and report any shortages
- Participate in deep cleaning and kitchen organization projects
- Report any equipment failures or safety issues to leadership
- Support other kitchen stations when requested
Teamwork with a Customer Focus
At Aubergine Kitchen, we are all responsible for providing an excellent customer experience. In addition to your daily tasks, you may also be asked to assist in other areas during busy periods or downtime, such as:
- Clearing bowls and utensils from tables after use
- Helping clean and organize the dining area (tables, chairs, floor)
- Restocking disposable utensils, napkins, and bags at the self-service station
- Supporting the team or other departments as needed, always keeping customer satisfaction as the priority
What We Are Looking For
- Ability to communicate in English, Spanish, or Portuguese — our kitchen team operates across languages and you should be able to work effectively in at least one of them
- Ability to maintain pace and accuracy in a high-demand, closing-shift environment
- Strong organization and attention to detail to maintain food standards through the end of service
- Commitment to food safety, station hygiene, and proper food handling
- Teamwork and clear communication with kitchen colleagues and leadership
- Professional demeanor, punctuality, and reliability
- Ability to handle pressure calmly during peak hours
- Flexibility to adapt to different kitchen roles (grill, assembly, finishing, etc.)

Education & Experience
- Must be at least 25 years of age — we are looking for experienced, mature kitchen professionals
- Prior experience in a restaurant or professional kitchen is required — this role demands someone who has worked in a real kitchen environment and brings the discipline and knowledge that comes with it
- Must successfully complete Aubergine’s training program and position-specific training
- Food Handler Certificate required within 14 days of hire — company support provided
Physical Requirements
With or without reasonable accommodations, must be able to perform the essential functions of the job.
- Available to work 30–40 hours per week, including weekends and holidays — Aubergine is closed on Sundays and on Thanksgiving, Christmas, and the 4th of July
- Ability to stand and move around for extended periods
- Ability to lift, push, and carry items up to 50 lbs (approx. 22 kg)
- Good physical stamina and agility in a fast-paced environment
- Exposure to heat, steam, and cold typical of a kitchen environment
