Primary Responsibility: Mise en place items required for work station according to par sheets or instructions from Chef/Sous Chef. Prepare products assigned to your work station during service.
Principle Duties:
- Set up and breakdown of station area, including preparation of meats, seafood, vegetables, garnishes and other items required for line or special purposes for menus.
- Prepare all foods for menu(s) by using club recipes, following established portion control and presentation standards.
- Assist with preparation of other food products on serving line and banquets as needed.
- Return unused food products to proper storage areas; write down waste on posted sheets.
- Cover, date and neatly store meats, poultry, seafood, soups and sauces.
- Ensure that work station and equipment are clean and sanitary.
- Establish and adhere to food cost goals, take corrective action as necessary to assure that financial goals are attained.
- Operate food production equipment according to manufacturer’s instructions.
- Maintain highest sanitary standards in all areas (including use of Sani buckets).
- Change fryer oil weekly
- Adhere to state and local health safety regulations.
- Maintain security and safety in all work areas.
- Maintain neat and professional appearance and observe personal cleanliness rules at all times.
Physical, Mental and Visual Skills
Good organizational and verbal skills. Ability to use logical or rational thinking to resolve issues. Ability to perform basic mathematical skills, monitor and courteously develop subordinates, visually monitor the operation areas, write and read member communications.
Must have the ability to perform moderate physical work and may be required to lift up to 60 lbs, up to 30 lbs frequently and up to 10 lbs constantly. Perform activities such as bending, kneeling, crouching, climbing, reaching, standing, pushing, lifting and grasping for up to 5 hours without sitting.
Working Conditions
Works primarily indoors. Potential exposure to sharp and rapid equipment movement, sharp utensils, harmful chemicals and or solvents if proper safety procedures are not followed.
