Position Summary
Line Cooks execute prep and service to exacting standards, ensuring every dish reflects JAG quality, consistency, and speed. You’ll own your station—from mise en place to plating—while upholding food safety, cleanliness, and teamwork during high-volume service.
Key Responsibilities Grill Station Setup & Prep
- Set up and stock the grill station to par before each service, ensuring all proteins, vegetables, marinades, and tools are ready for execution
- Execute prep specific to grill operations: portioning proteins, marinating, skewering, and organizing mise en place for efficient service
- Maintain proper labeling, dating, and storage using FIFO; monitor freshness and rotate inventory accordingly
- Manage grill-specific tools and fuel/heat sources (charcoal, wood, gas) as applicable
Grill Execution & Service
- Cook proteins, seafood, and vegetables on the grill to precise temperature and doneness standards
- Control heat zones, flare-ups, and timing to ensure consistency and quality across all dishes
- Execute proper resting, slicing, and plating techniques to maintain integrity and presentation
- Coordinate with expo and kitchen team to ensure accurate timing, communication, and flow of service
- Communicate 86s, low pars, and grill station needs proactively
Quality, Technique & Consistency
- Follow standardized recipes and portioning while mastering grill-specific techniques (searing, charring, basting, resting)
- Ensure consistency in seasoning, temperature, and presentation of all grilled items
- Participate in tastings and apply feedback; escalate quality concerns immediately
- Adapt to menu changes, specials, and evolving grill techniques
Food Safety & Sanitation
- Adhere to DOH and company sanitation standards, with a strong focus on safe handling of raw proteins and cross-contamination prevention
- Maintain proper temperature control for storage, cooking, and holding of grilled items
- Follow allergen protocols and ensure grill surfaces and tools are properly cleaned between uses when needed
- Clean as you go; complete opening/closing and deep-cleaning duties for the grill station
Inventory, Waste & Cost Awareness
- Assist with receiving and properly storing proteins and grill-related products
- Minimize waste through proper butchery, portion control, and yield management
- Monitor and communicate spoilage, low inventory, and product quality issues
Equipment & Maintenance
- Safely operate and maintain grill equipment (charcoal, wood-fired, or gas grills), including temperature control and cleaning
- Perform routine maintenance (cleaning grates, emptying ash, grease management)
- Report equipment issues or inconsistencies immediately
Teamwork & Culture
- Support teammates during peak service; assist with other stations as needed
- Maintain clear and professional communication with kitchen team and leadership
- Contribute to a positive, respectful, and high-performance kitchen culture
- Demonstrate reliability, urgency, and accountability at all times
Events & Openings (as applicable)
- Execute high-volume or event grilling with consistency and precision
- Support menu rollouts, tastings, and new opening preparations
Required Qualifications
- 1+ year of experience in a professional kitchen, with grill or open-fire cooking experience preferred
- Strong understanding of meat, seafood, and vegetable cookery, including temperatures and doneness levels
- Ability to manage high heat and fast-paced service with precision
- Knowledge of food safety, sanitation, and allergen protocols; Food Handler certification preferred
- Strong communication, teamwork, and organization skills
- Availability to work nights, weekends, and holidays
Working Conditions & Physical Requirements
- Stand and move for extended periods (8+ hours)
- Lift and carry up to 35–50 lbs
- Continuous exposure to high heat, open flames, and hot surfaces
- Frequent bending, reaching, and repetitive motion
