Sous Chef/Assistant Kitchen Manager
Concept: Scratch Kitchen – American Bistro
Position Summary
The Sous Chef/Assistant Kitchen Manager supports the Executive Chef in leading all back-of-house operations. This role is responsible for maintaining high culinary standards, ensuring consistent execution of scratch-made menu items, managing kitchen staff, and driving food quality, safety, and cost control.
Key Responsibilities
Culinary Execution & Quality Control
- Execute and oversee preparation of all scratch-made menu items to recipe and presentation standards
- Ensure consistency, portion control, and plate quality during all service periods
- Lead line execution during peak service times
- Assist in seasonal menu development, specials, and recipe refinement
Kitchen Leadership
- Supervise, train, and develop line cooks, prep cooks, and dish staff
- Act as manager-on-duty for BOH when Executive Chef/KM is absent
- Foster a culture of accountability, teamwork, and professionalism
- Assist in hiring, onboarding, and performance management
Operations & Efficiency
- Manage daily prep lists, station assignments, and production schedules
- Ensure proper kitchen organization, cleanliness, and workflow efficiency
- Monitor ticket times and kitchen throughput to meet service standards
Food Safety & Sanitation
- Enforce all health department regulations and food safety standards (HACCP principles)
- Maintain proper food storage, labeling, and rotation (FIFO)
- Ensure cleanliness and sanitation of all kitchen equipment and areas
Inventory & Cost Control
- Assist with ordering, inventory counts, and vendor relationships
- Monitor food cost, waste, and portioning to meet financial goals
- Support invoice review and product quality checks
Equipment & Maintenance
- Ensure proper use and care of all kitchen equipment
- Report and coordinate repairs and preventative maintenance
Qualifications
- 2–5+ years of kitchen leadership experience in a scratch kitchen or upscale casual concept
- Strong knowledge of classical cooking techniques and American cuisine
- Proven ability to lead teams in a high-volume environment
- Solid understanding of food safety and sanitation standards
- Experience with inventory, ordering, and cost control
- Ability to work evenings, weekends, and holidays
- Must be Bi-lingual English/Spanish
