JOB SUMMARY
We are seeking a dependable and experienced Lunch Cook to join our culinary team at a remote camp on Alaska's North Slope. This position directly reports to the Head Cook and is responsible for preparing and serving high-quality lunch meals. Including entrees, soups, sides, and other related menu items while maintaining strict HACCP food safety and sanitation standards.
The Lunch Cook prepares items following a cycle menu, using standardized ingredients, assists with meal planning and production needs, supervises assigned staff as needed, and helps ensure a safe, efficient, and professional kitchen operation.
The ideal candidate has experience in high-volume food production, is committed to food safety excellence, and thrives in a fast-paced, team-oriented remote camp environment.
- Work Location: Remote Camp, North Slope, Alaska
- Rotational Schedule: 3 weeks on/3 weeks off or 2 weeks on/2 weeks off; varies by job site
- Work shifts: 12 hours/day (40 hrs straight time + 44 hrs OT per work week).
- Travel: Flights between Anchorage and the job site are arranged and paid for by the company

JOB DUTIES
- Prepare and serve lunch meals utilizing standardized ingredients and established menu cycles.
- Prepare daily specials, soups, entrees, sides, and related menu items within quality, presentation, and sanitation guidelines.
- Maintain proper food temperatures and food quality standards throughout preparation and service.
- Follow HACCP principles and company food safety procedures to ensure safe food handling practices.
- Monitor food production to minimize waste while meeting client expectations and camp population needs.
- Clean, sanitize, and maintain kitchen workstations, equipment, serving areas, and food preparation areas.
- Properly cool, label, store, and rotate food products according to food safety standards.
- Break down serving lines and store leftover products in compliance with HACCP guidelines.
- Assist with food ordering, receiving, inventory management, and stock rotation as directed.
- Support special menu functions, catering events, and client requests when required
- Assist with training, mentoring, and supervising assigned kitchen staff.
- Communicate with guests, clients, supervisors, and staff efficiently and courteously.
- Promote and maintain a safe work environment by following DUS safety policies and wearing required PPE.
- Adapt to changing camp populations and operational requirements.
- Ability to work in a constant state of alertness in a safe manner.
- Willingness to perform other duties as assigned.
- Willingness to work at various locations as required.
REQUIRED QUALIFICATIONS
- Must be 18 years of age
- High school diploma or equivalent
- Minimum of two years of experience in high volume food production
- Current ServSafe certification
- Able to proficiently speak, read, understand and write English
- Reliable access to a smartphone capable of running apps for scheduling,
- timekeeping (clocking in/out), shift communications, and time-off requests.
- Must be able to pass the Company’s pre-employment screening process, including drug screen, criminal background investigation, and post-offer physical/fitness for duty evaluation.
PREFERRED QUALIFICATIONS
- Five years of experience in high volume food production
- Culinary training from an accredited Culinary Institute
- Previous experience in a remote camp or remote-site experience
- Experience in institutional, industrial, or catering food service operations
WORK ENVIRONMENT AND EXPECTATIONS
- Work is performed in a commercial kitchen within a remote camp
- Ability to remain on your feet for long shifts and perform repetitive physical tasks, including lifting up to 50 lbs.
- Willingness to work day or night shift.
- Must be comfortable living and working in a remote location with shared housing accommodations and communal facilities.
- Teamwork, reliability, and a positive attitude are essential
- Strict adherence to safety, hygiene, and conduct standards
