We are opening a new restaurant in the American Tobacco Campus area of downtown Durham! We are looking for someone to hire before the opening date, slated for mid-July 2026, who will start out in an Assistant General Manager role & be able to be promoted to General Manager after about 6 months of training & working onsite. East of Texas is part of a growing restaurant group in Winston-Salem. We are excited to expand our brand into Durham & bring our Tex-Mex style BBQ concept to the area!
Position Overview
The Assistant General Manager (with plans to be promoted after the first six months of employment) is responsible for leading and stabilizing all day-to-day restaurant operations across Front of House and Back of House. This role ensures consistency, accountability, and execution of systems while maintaining a strong guest experience.
This is a hands-on, floor-driven leadership role with a primary focus on operational excellence—not just vision. The AGM/GM ensures the business runs smoothly, efficiently, and profitably while upholding the standards of the East of Texas experience.
Core Responsibilities:
Operations Leadership
- Oversee all daily operations across FOH and BOH
- Ensure smooth service flow, proper staffing, and efficient execution
- Maintain and enforce systems, processes, and SOPs
- Create, monitor and manage all scheduling with help from leadership (Alex)
- Oversee inventory, ordering, and cost control (COGS awareness)
- Ensure all opening, side work, and closing procedures are followed
Floor Presence & Service Execution
- Actively lead shifts and be present during peak service times
- Step into expo or kitchen support roles when needed
- Support FOH during service to maintain flow and standards
- Ensure cleanliness, organization, and physical space upkeep (lighting, layout, ambiance)
Team Leadership & Accountability
- Supervise FOH Admins (Operations, Hospitality & Bar) and Kitchen Manager execution
- Provide clear direction, feedback, and accountability to all staff
- Address performance issues, discipline, and coaching
- Assist in hiring decisions and ensure proper onboarding execution (FOH & BOH)
- Step in to cover shifts or gaps as needed
Food Quality & Consistency
- Ensure food quality meets standards consistently
- Regularly taste food and monitor presentation
- Partner with Kitchen Manager/Pitmaster to maintain recipe adherence and execution
- Ensure food safety standards are upheld
Guest Experience Oversight
- Work closely with FOH Admin & FOH shift leaders to ensure excellent guest experience
- Ensure strong guest experience is consistently delivered
- Step in to resolve escalated guest concerns
- Support table touches during service when needed
- Ensure the intended East of Texas ambiance is maintained
Communication & Coordination
- Maintain clear communication with:
- FOH Admins
- Kitchen Manager
- Ownership / Operations / HR
- All BOH & FOH staff members (with help from other managers)
- Ensure team is informed on caterings, events, promotions, and updates
- Weekly meetings with Operations & Managers
Caterings, Events & Business Support
- Support execution of caterings, events and in-house programming
- Ensure operational readiness for all events
- Assist in aligning staffing and service with event needs (working with Carmon & Shaun)
Qualifications
- 3+ years of restaurant management experience (multi-department oversight preferred)
- Strong operational leadership and problem-solving skills
- Ability to lead both FOH and BOH teams effectively
- Comfortable working in fast-paced, hands-on environments
- Flexible schedule, including nights, weekends, and events
- Reliable and consistent—follows through on tasks without reminders
- Comfortable holding peers accountable in a professional, respectful way
Pay: $70,000.00 - $85,000.00 per year
